APPLE GINGERBREAD SKILLET CAKE

Apple Gingerbread Skillet Cake image

This gingerbread recipe came from my grandmother, and we always ate it with warm applesauce. I adapted it into a one-pan dessert by layering the apples around the bottom of a cast-iron skillet and topping them with the gingerbread batter. The skillet creates a wonderfully thick crust on the gingerbread. -Mary M. Leverette, Columbia, South Carolina

Categories     Bon Appétit     Cake     Apple     Dessert     Fall     Brunch     Ginger     Cinnamon     Clove     Molasses     Maple Syrup     Bake

Yield Serves 10

Number Of Ingredients 17

3 tablespoons plus 1/2 cup unsalted butter, plus more for pan
1 cup (packed) light brown sugar, divided
1 pound lady apples, unpeeled, very thinly sliced, seeds removed, divided
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons kosher salt
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1/2 cup robust-flavored (dark) molasses
1/2 cup pure maple syrup
2 large eggs, room temperature
2 tablespoons finely grated peeled ginger
1 1/2 teaspoons baking soda
1/2 cup heavy cream, plus more for serving
Special Equipment
A 10-inch springform pan

Steps:

  • Preheat oven to 350°F. Butter pan and line bottom with a parchment round; butter parchment. Heat 1 Tbsp. butter, 1/2 cup brown sugar, and 2 Tbsp. water in a large skillet over medium, stirring constantly, until butter is melted and sugar is dissolved. Cook, without stirring but swirling skillet often, until large bubbles that are slow to pop form, about 2 minutes. Pour caramel into prepared pan and tilt pan to evenly coat bottom.
  • Melt 1 Tbsp. butter in same skillet over medium heat; add half of apples and toss to separate. Cook, tossing often, until apples are softened and almost translucent, about 4 minutes. Repeat process with another 1 Tbsp. butter and remaining apples. Let apples sit until cool enough to handle, then arrange over caramel in several overlapping layers. Set pan aside.
  • Whisk flour, baking powder, salt, cinnamon, cloves, and nutmeg in a large bowl to combine; set aside. Heat molasses, maple syrup, remaining 1/2 cup brown sugar, and remaining 1/2 cup butter in a heatproof bowl set over a saucepan of barely simmering water, stirring constantly, until butter is melted and mixture is smooth. Whisk in eggs and ginger. Stir baking soda into 1/4 cup very hot water in a small bowl until dissolved, then whisk into molasses mixture. Whisk molasses mixture into reserved dry ingredients and scrape batter over apples, spreading evenly. Evenly drizzle 1/2 cup cream over batter.
  • Place cake on a foil-lined rimmed baking sheet and bake until center is firm to the touch and a cake tester inserted into the center comes out clean, 35-45 minutes. Transfer pan to a wire rack and let cake cool in pan 15 minutes. Run a paring knife around the sides of cake to loosen, then remove the sides of pan and invert cake onto rack. Carefully remove pan and peel away parchment (apples might stick, so work slowly). Let cool completely.
  • Slice cake into wedges and serve drizzled with more cream.
  • Do Ahead
  • Cake can be baked 1 day ahead. Store tightly covered at room temperature. To revive apples, reheat cake slightly in a microwave and brush top with maple syrup.

APPLE AND CHEDDAR SKILLET CAKE

Apple and Cheddar Skillet Cake image

A skillet cake with delicious candied apple flavor and a savory bread crust.

Provided by Pomander

Categories     Desserts     Fruit Dessert Recipes     Apple Dessert Recipes

Time 50m

Yield 10

Number Of Ingredients 8

1 cup butter
1 ½ cups white sugar, divided
6 each Granny Smith apples - peeled, cored, and diced
2 teaspoons ground cinnamon
2 teaspoons ground nutmeg
2 cups baking mix (such as Jiffy®)
1 cup milk
6 ounces shredded sharp white Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine butter and 1 1/4 cups sugar in a 9-inch oven-safe skillet over medium heat. Cook and stir until sugar dissolves and mixture begins to caramelize, 5 to 10 minutes. • Combine baking mix, milk, shredded Cheddar cheese, and remaining 1/4 cup sugar in a bowl and stir until consistency is similar to a waffle batter. Spoon mixture evenly over the apples in the skillet; no need to be too precise as it will spread out while baking.

Remove from the oven and allow to cool on the stovetop until the caramelized sugar thickens a bit, about 5 minutes. APPLE-GINGER STACK CAKE

Apple-Ginger Stack Cake image

In Kentucky and its environs, this dessert once served as a wedding cake; neighbors and friends might have each brought a layer, and the hosts would add the filling. We plumped up dried apples in cider and tucked them between layers of clove-and ginger-spiced molasses cake.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes     Cake Recipes

Number Of Ingredients 13

5 cups dried apples (about 3/4 pound)
5 cups apple cider
1 2/3 cups granulated sugar
1 cup (2 sticks) unsalted butter, softened, plus more for pans
3 cups sifted all-purpose flour, plus more for pans
1 large egg
1 cup unsulfured molasses
1 cup buttermilk
1 teaspoon baking soda
1 teaspoon ground ginger
1/8 teaspoon ground cloves
1/2 teaspoon salt
Confectioners' sugar, for dusting

Steps:

  • Bring apples and cider to a boil in a large pot. Reduce to a simmer; cook, stirring occasionally, until apples begin to soften and liquid has reduced, 40 to 50 minutes. Add 1 cup water; cook, mashing apples slightly, until liquid has reduced, about 10 minutes. Add 2/3 cup granulated sugar and 1/2 cup water; simmer until apples are very soft and coated in syrup, about 15 minutes. Let cool completely.
  • Preheat oven to 375 degrees. Butter two 9-inch round cake pans. Line bottoms with parchment paper, and butter parchment. Dust with flour; tap out excess. Set aside.
  • Put butter and the remaining cup sugar in the bowl of an electric mixer fitted with the paddle attachment. Mix on medium-high speed until creamy, about 3 minutes. Reduce speed to low; mix in egg, molasses, buttermilk, baking soda, flour, spices, and salt.
  • Divide batter evenly between prepared pans. Bake until a cake tester inserted into centers comes out clean and tops spring back when lightly touched, about 35 minutes. Let cool on a wire rack 10 minutes. Run a knife around edges of pans to loosen; invert to unmold. Remove parchment; reinvert onto racks. Let cool.
  • Using a long serrated knife, cut each cake in half horizontally. Place 1 bottom layer on a serving platter. Top with 1/3 of the apple mixture, spreading to edges. Stack 1 top layer on top of apples, and top with another 1/3 of the apple mixture. Repeat with remaining cake bottom and apples, and top with remaining cake top. Let stand at room temperature at least 1 hour before serving. Sift confectioners' sugar over top of cake.

APPLE SKILLET CAKE

This treat is heavy on apples and light on batter, so it's more like a thin German pancake than a dense cake.

Provided by Martha Stewart

Number Of Ingredients 10

3 large eggs
1 cup low-fat milk
1/2 cup all-purpose flour

Tips:

  • Prep before you start: Gather all your ingredients and equipment before starting to bake. This will ensure that you have everything you need and that your ingredients are at room temperature, which is essential for some recipes.
  • Follow the recipe accurately: Baking is a precise science, so it's important to follow the recipe exactly. This means measuring your ingredients accurately, using the correct type of ingredients, and following the instructions step-by-step.
  • Don't overmix the batter: Overmixing can cause the gluten in the flour to develop, resulting in a tough, dense cake. Mix the batter only until the ingredients are combined.
  • Use a light hand when greasing the pan: Too much grease can prevent the cake from rising evenly. Lightly grease the pan with butter or cooking spray, making sure to get into all the corners and crevices.
  • Preheat the oven: Always preheat your oven to the correct temperature before baking. This will ensure that the cake bakes evenly.
  • Don't open the oven door during baking: Opening the oven door during baking can cause the cake to fall. Only open the door to check on the cake towards the end of the baking time.
  • Test the cake for doneness: Insert a toothpick or skewer into the center of the cake. If it comes out clean, the cake is done. If it comes out with batter or crumbs attached, the cake needs to bake for a few more minutes.
  • Let the cake cool before serving: Allow the cake to cool for at least 15 minutes before serving. This will help the cake to set and make it easier to slice.

Conclusion:

Baking is a fun and rewarding experience, and with a little practice, you can create delicious cakes that will impress your family and friends. By following the tips above, you can ensure that your cakes turn out perfectly every time.
