At the campground where my husband and I have a trailer, the campers hold an auction of baked goods every Fourth of July. I donated this moist tube pan cake last year and it brought in the highest bid! I often use black walnuts in place of regular walnuts because they add a special flavor.

3 eggs
1 cup canola oil
1 tablespoon vanilla extract
2 cups shredded peeled tart apples
2 cups sugar
3 cups all-purpose flour
1 tablespoon ground cinnamon
1 teaspoon baking soda
1 teaspoon salt
3/4 teaspoon ground nutmeg
1/2 teaspoon baking powder
1 cup chopped walnuts
2 tablespoons confectioners' sugar
2 tablespoons brown sugar

Steps:

  • In a large bowl, beat the eggs, oil and vanilla. Add apples and sugar; beat for 1 minute. Combine the flour, cinnamon, baking soda, salt, nutmeg and baking powder; add to apple mixture until blended. Stir in walnuts. , Pour into a greased and floured 10-in. fluted tube pan. Bake at 325° for 50-60 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely. , Combine confectioners' sugar and brown sugar; sprinkle over cake.

1 can apple pie filling
1 teaspoon salt
3/4 cup chopped walnuts
1 1/2 teaspoons baking soda
2/3 cup oil
1 cup sugar
1 teaspoon vanilla
2 cups flour
2 eggs, beaten
1 cup sugar
1/2 cup sour cream
1/2 teaspoon baking soda

Steps:

  • Preheat oven to 350F degrees.
  • Spread pie filling in bottom of ungreased 13x9 pan.
  • Combine flour, baking soda& salt; sprinkle over pie filling.
  • In a separate bowl, combine eggs, vanilla, oil& 1/2 cup of the walnuts; mix well.
  • Pour over ingredients in pan; stir only until blended,& smooth batter evenly.
  • Bake 40-50 minutes or until cake springs back when lightly touched in center.
  • While cake is baking, combine topping ingredients in a sauce pan.
  • Cook over medium heat, stirring constantly until mixture comes to a boil; remove from heat.
  • When cake is done, remove from oven& immediately prick with a fork all over.
  • Pour hot topping over hot cake, sprinkle with remaining walnuts.
  • Serve warm.

Apple Pan Cake-
2 cans Apple pie filling
2 Cups flour
1 cup sugar
1 1/2 tsp. baking Soda
1/2 tsp salt
2 eggs beaten slightly
1 tsp vanilla extract
2/3 cup cooking oil
3/4 cup chopped walnuts-divided
Sour cream topping
2 cup sugar
1 cup sour cream
1 tsp Soda
Combine ingredients in a sauce pan.
Cook over Med. Heat stirring constantly until mixture comes
to a boil. Remove from heat, pour over warm cake.
Note: Cherry, Peach, Apricot, Pineapple, filling may be substituted.

Steps:

  • Spread pie filling on bottom of 13X9 pan. Combine flour, sugar, soda & salt. Sprinkle over pie filling. In mixing bowl combine eggs, vanilla, oil & 1/2C nuts mix well. Pour over ingredients in pan. Fold until well blended, smooth batter evenly in pan. Bake @ 350o for 40-50 min. Prick warm cake w/fork. Pour hot topping over cake sprinkle 1/4 cup nuts. Serve warm or cold.
