6 large apples (peeled, cored & sliced thin) i used granny smith & pink cripps
2 Tbsp lemon juice
1 c bisquick, original
1 c granulated sugar or splenda
4 large eggs
1 1/2 tsp cinnamon
1/2 tsp freshly grated nutmeg
3 Tbsp butter, softened
CRUNCHY PECAN TOPPING
1 c original bisquick
1 c chopped pecans (or nuts of your choice)
1 c firmly packed brown sugar
5 Tbsp softened butter

Steps:

  • 1. Preheat oven to 350 degrees F. Spray a medium size dish with cooking spray, I used a 6X12 size rectangle dish. I had to switch to the larger size 6X12 dish instead of the 9X9, because I had more filling than I originally thought.
  • 2. Add peeled and sliced apples to a medium size bowl with lemon juice, then toss to coat evenly.
  • 3. In a separate medium bowl, add Bisquick, with sugar, cinnamon, nutmeg , butter & eggs. Beat till well blended.
  • 4. Pour apples into the batter, and stir to blend till all the apples are completely coated on all sides.
  • 5. Pour into prepared dish.
  • 6. Now combine all of the ingredients for the crunchy topping in a medium bowl.
  • 7. Crumble mixture over the top of the apple mixture.
  • 8. Bake in preheated 350 degrees F. oven for 50 to 55 minutes, till apples are tender, and mixture is hot & bubbly.
  • 9. Serve with whipped topping or your favorite ice cream if desired. The original version of this recipe came from a Bisquick Cookbook, before I made changes for this version.

APPLE OR CHERRY PIE DESSERT PIZZA

1 1 fresh pizza dough to make 1 round pizza
1-2 can(s) apple, cherry or peach pie filling (use enough of the filling to cover whole pizza)
TOPPING
1 c flour
1/2 c brown sugar
1 stick cold butter
ICING DRIZZLE
1 c powdered sugar
2 Tbsp milk or cream
1 tsp pure vanilla extract

Steps:

  • 1. Place pizza crust on parchment lined pizza pan and preheat oven to 350.
  • 2. Spread pie filling over entire pizza crust.
  • 3. Mix all topping ingredients together with a pastry cutter until course crumbs form. Sprinkle over pie filling on pizza dough.
  • 4. Bake in oven for about 25 minutes until pizza is golden brown.
  • 5. Mix ingredients for icing and drizzle over cooled pizza. Enjoy!

YOUR FAVORITE DOUBLE PIE CRUST RECIPE
PIE FILLING
8 gala apples, peeled, cored, bite size pcs
1/4 c raisins
1/2 c chopped walnuts
8 oz pkg. fat free cream cheese
1/2 c semi-sweet choc. chips
1/8 tsp nutmeg
1/2 tsp cinnamon
1/4 c white sugar
2 tsp spenda brown sugar blend
2 Tbsp honey
3 Tbsp water
1 egg

Steps:

  • 1. Peel, core and cut apples into small bite size pc. Add of a pan with 3 TBL of water, nutmeg, cinnamon, sugars and honey. Let simmer on very low heat while you prepare the pie crust.
  • 2. Once pie crust is ready using your favorite pie crust recipe, add cream cheese and choc. chips to apple mix, mix well in pan. Pour mix into pie crust and add lattice top. TIP: place cream cheese in freezer for a short time for easier handling.
  • 3. Brush lattice top with egg wash and sprinkle with white sugar. Bake 375° for 40-45 min.

Tips:

  • Use a variety of apples. This will give your pie a more complex flavor and texture. Some good options include Granny Smith, Honeycrisp, and Braeburn.
  • Peel and core your apples. This will make them easier to slice and will help the pie filling to cook evenly.
  • Slice your apples thinly. This will help them to cook quickly and evenly.
