Steps:

  • Heat oven to 425 degrees F. Beat butter and 1/3 cup of the sugar in small bowl with electric mixer on medium speed until light and fluffy. Add flour; mix well. Spread onto bottom and 1 inch up side of 9-inch springform pan.
  • Beat cream cheese and 1/3 cup of the remaining sugar in same bowl with electric mixer on medium speed until well blended. Add egg and vanilla; mix well. Spread evenly over crust. Combine remaining 1/3 cup sugar and the cinnamon. Add to apples in large bowl; toss to coat. Spoon over cream cheese layer; sprinkle with almonds.
  • Bake 10 min. Reduce temperature to 375 degrees F; continue baking 25 min. or until centre is set. Cool on wire rack. Loosen torte from rim of pan. Cover and refrigerate 3 hours before serving. Store any leftovers in refrigerator.

Steps:

  • Preheat oven to 450 degrees F(230 degrees C).

2 pounds tart apples such as Granny Smith, Northern Spy, or Greening, peeled, halved lengthwise, and cored
3/4 teaspoon salt, divided

1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
3/4 teaspoon ground allspice
1/2 teaspoon cinnamon
1/4 teaspoon grated nutmeg
1 1/2 cups walnuts (5 ounces), coarsely chopped, toasted , and cooled completely
2 large eggs
1 teaspoon pure vanilla extract
1/4 teaspoon pure almond extract
3 tablespoons apple jelly
Equipment: a 9- by 3-inch round cake pan or a 9-inch springform pan wrapped in foil

Steps:

  • Preheat oven to 350°F with rack in middle.
  • Butter pan and fit a round of parchment paper in bottom. Butter parchment, then flour pan.
  • Spread 1/2 stick butter thickly on bottom of a 12-inch heavy skillet and sprinkle 1/2 cup sugar evenly over butter. Arrange apples, cut sides down, over sugar and sprinkle with 1/4 teaspoon salt. Cook over medium heat, turning apples occasionally, until sugar is caramelized and apples are tender and golden brown, 15 to 20 minutes.
  • Arrange apples, cut sides down, in concentric circles in bottom of cake pan, then pour over any caramel from skillet.
  • Whisk together flour, baking powder, baking soda, allspice, cinnamon, nutmeg, and remaining 1/2 teaspoon salt.
  • Pulse walnuts with remaining cup sugar in a food processor until finely ground.
  • Beat remaining 1 1/2 sticks butter in a bowl with an electric mixer until creamy, about 3 minutes. Add walnut sugar and beat until just combined. Add eggs 1 at a time, beating well after each addition, then beat in extracts. At low speed, mix in flour mixture until just combined (batter will be thick).
  • Dollop batter over apples and spread evenly. Bake until torte just begins to pull away from side of pan and a wooden pick inserted in center comes out clean, 45 to 50 minutes. Cool torte in pan on a rack 30 minutes. Put rack over torte, then invert torte onto rack.
  • Melt apple jelly in a small heavy saucepan over low heat, stirring. Brush apples generously with jelly, then cool torte completely, 1 to 1 1/2 hours.

  • Make topping:

  • Bake torte until crust is deep golden and apples are tender, about 1 hour 30 minutes. Remove from oven; cool 1 hour. Cover; refrigerate overnight. (Torte can be prepared 3 days ahead. Keep refrigerated.)

125 g sugar
250 g self raising flour (2 cups)
100 g butter
30 g sugar
1 egg, beaten

Steps:

  • Cut peeled apples into quarters, then each quarter into 5 pieces, then partically cook apple with sugar, keep hot.
  • Sift flour into bowl, rub in butter, add sugar, then egg and mix to soft dough.
  • Roll out half the pastry and line large, deep flan.
  • Spread apples to within 1/2" of top of flan tin.
  • Grate remainder of pastry over top and bake 25-30mins at 220 deg C (425 deg F).

My friend, Nancy, shared this recipe with me. For such an elegant presentation, it's very easy to make. In this version, you don't even need to mix the apples before putting them on the filling.

  • Hint #1: I purchase almonds already sliced, and simply toast them in a non-stick skillet at medium-high heat until fragrant and just starting to turn golden, just 2 or 3 minutes.
  • Hint #2; Have all ingredients at room temperature, and make the recipe in the order as written, saving the apple-peeling until just before you sprinkle on the almonds.
  • Hint #3: Use real vanilla extract, not vanilla flavor. It makes a big difference in the quality of flavor.

Crust:
8 cups fresh breadcrumbs made from crustless Italian or French bread (finely ground in processor)
1 cup hazelnuts, toasted , husked
10 tablespoons sugar, divided
4 teaspoons finely grated lemon peel
1/4 teaspoon (generous) salt
3/4 cup whole milk
6 tablespoons (3/4 stick) unsalted butter, cut into 1-inch pieces
Powdered sugar (for dusting)
Whipped cream
Special Equipment
9-inch-diameter tart pan with removable bottom

Steps:

  • For apple filling:
  • Arrange apples in even layer in heavy large skillet. Sprinkle with sugar, then pour apple cider over. Cover and cook over medium heat until apples are tender, gently turning apples occasionally, 8 to 10 minutes. Uncover; cook until juices evaporate, frequently but carefully turning apples to keep wedges intact, about 10 minutes. Remove from heat. Let apples cool completely in skillet. 2 sweet red apples (6 ounces each), such as Braeburn or Jonagold, peeled, cored, and sliced 1/8 inch thick
1 tablespoon fresh lemon juice
1 tablespoon unsalted butter or nondairy margarine
3/4 cup granulated sugar
1 teaspoon ground cinnamon
2 tablespoons sweet kosher wine
Vegetable oil cooking spray, for pan
6 large eggs, room temperature, separated
1 1/4 cups toasted pecans, finely ground
1/4 cup matzo cake meal (or finely ground matzo meal)
1/2 teaspoon salt
Garnish: confectioners' sugar

Steps:

  • Toss apples with lemon juice. Melt butter in a skillet over medium-high heat. Add apples, 1/4 cup granulated sugar, and 1/2 teaspoon cinnamon; toss. Cook until softened, 2 to 3 minutes. Add wine. Cook until almost absorbed and apples are syrupy, about 3 minutes.
  • Preheat oven to 350 degrees. Coat a 9-inch springform pan with cooking spray. Whisk together yolks and 1/4 cup granulated sugar with a mixer on medium-high speed until pale and thick, about 3 minutes. Transfer to a large bowl; fold in apples, pecans, matzo cake meal, and remaining 1/2 teaspoon cinnamon.
  • Whisk whites, salt, and remaining 1/4 cup granulated sugar in a clean bowl of a mixer until stiff, glossy peaks form. Working in 3 batches, gently fold whites into batter. Pour into pan. Bake until top is brown and a toothpick comes out clean, about 35 minutes. Let cool.

3 medium granny smith apples, peeled and cut into 1/2 inch pieces
3 tablespoons sugar
2 tablespoons flour
2 1/2 teaspoons cinnamon
1 tablespoon butter
2 teaspoons vanilla
1 (15 ounce) can coconut pecan frosting
1 cup chopped pecans

Steps:

  • Preheat oven to 450.
  • Unfold both pie crusts.
  • Cut each crust in half.
  • Place crust halves on ungreased cookie sheets.
  • Prick several times with fork.
  • Bake for 6 to 8 minutes or until light golden brown.
  • Cool while preparing filling.
  • In large microwave-safe bowl, combine apples sugar, flour, cinnamon, butter and vanilla Mix well.
  • Cover and microwave on high for 3 minutes.
  • Stir.
  • Microwave an additional 3 to 6 minutes, or until apples are tender (stirring once halfway through cooking) Place 1/2 cup of frosting in a small microwave safe bowl; set aside.

  • Spread with 1/3 of apple mixture (about 1 cup); sprinkle with 1/4 cup of pecans Top with second crust half, pressing lightly.
  • Repeat layers ending with fourth crust half.
  • Cover loosely with foil.
  • Bake at 450 for 8 minutes.
  • Remove foil and bake an additional 1 or 2 minutes or until golden brown.
  • Microwave reserved frosting on high for 20 to 30 seconds, or until melted.
  • Pour over top of torte and spread to edges.
  • Sprinkle with remaining 1/4 cup pecans.
  • Cool 15 minutes.

  • Torte: Preheat oven to 350F. Butter 8-inch round or square pan with 2-inch high sides. Saute raisins until vermouth is almost gone, then let sit and soak up remaining liquid. Sift first 4 ingredients into medium bowl. Using electric mixer, beat sugar and butter in large bowl until blended. Add egg and beat well. Stir in dry ingredients, then apples, raisins and nuts.
