1/2 cup butter
1 cup firmly packed brown sugar
1 egg
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon cinnamon
1/4 teaspoon freshly grated nutmeg
1/2 cup raisins or 1/2 cup currants
1/2 cup chopped almonds, pecans or 1/2 cup freshly shelled walnuts
1 cup unsweetened applesauce
2 tablespoons granulated sugar
1/4 teaspoon cinnamon
1/4 teaspoon freshly grated nutmeg

Steps:

  • Grease or line 12 large muffin cups and set aside.
  • In a large bowl, cream together butter and brown sugar; beat in egg.
  • Stir together flour, baking powder, soda, salt, cinnamon and nutmeg.
  • Combine with raisins and almonds.
  • Stir dry ingredients into the batter in 3 parts, alternating with the applesauce in 2 parts.
