1/4 cup Dijon mustard

Habanero Sauce
2 tablespoons canola oil
1 small onion, finely chopped
4 cloves garlic, finely chopped
1/2 habanero pepper, seeded and finely chopped
1 teaspoon cumin
salt and freshly ground black pepper
2 cups orange juice
1/2 cup fresh lime juice
2 tablespoons fresh cilantro, finely minced

Steps:

  • Rub the tenderloin with 1/2 teaspoon of oil then season with salt and pepper. Whisk together the apricot, mustard and orange juice. Place the tenderloin on a hot grill, and sear all sides. 3 tablespoons butter
1/4 cup chopped celery

4 bone-in pork loin chops (about 8 ounces each, 3/4 to 1 inch thick), patted dry

1 medium onion, finely chopped (1/2 cup)
2 cloves garlic, finely chopped
1/4 teaspoon ground cinnamon
3 tablespoons cider vinegar
1 3/4 cups apple cider
3/4 cup chicken broth
2 dried bay leaves
1 fresh thyme sprig
1/2 cup apricot preserves
3 tablespoons cold firm butter, cut into 3 pieces
3 slices thick-cut bacon
4 pork loin or rib chops, about 1 1/4 inches thick (1 1/2 lb)
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
2 tablespoons chopped fresh parsley

Steps:

  • In 10-inch skillet (preferably nonstick), mix sugar and water with wooden spoon. Heat over medium-high heat 5 to 7 minutes, without stirring, until sugar turns dark golden brown and just begins to smoke (do not allow to burn). Remove from heat.
  • Add apple, onion, garlic and cinnamon to skillet and stir to coat (sugar may clump and harden at first but will melt again when heated). Return to heat and cook 3 minutes, stirring occasionally, until some liquid escapes from mixture.
  • Remove from heat and add vinegar (avert your head; the fumes from the vinegar can take your breath away). Stir and return to heat. Slowly stir in apple cider and broth (sugar may clump-that is okay, it will melt). When all liquids have been added, add bay leaves and thyme.
  • Heat to boiling. Reduce heat to medium. Simmer uncovered 20 to 30 minutes, stirring occasionally, until reduced by half.
  • Meanwhile, heat oven to 375°F. In 10-inch ovenproof skillet, cook bacon over medium-high heat until crisp and brown. Remove bacon from skillet; drain on paper towels, crumble and set aside. There should be about 1 tablespoon bacon drippings remaining in pan. If there is more, pour off excess; if there is less, add a little vegetable oil.
  • Sprinkle pork with salt and pepper. Place pork in bacon drippings in skillet and cook 4 minutes or until brown. Flip and brown on other side, about 4 minutes longer. Cover skillet with lid or foil and place in oven. Roast 8 minutes or until slightly firm when touched and meat thermometer inserted in center reads 155°F (pork will continue to cook to 160°F when removed from oven). Remove pork from skillet and place on plate. Cover tightly with foil; set aside.
  • The skillet used to cook the pork should have some cooking liquid in it. Place this skillet over medium heat. Pour the reduced sauce into skillet and stir to combine. Stir in apricot preserves and heat sauce to boiling. Boil 5 minutes, stirring occasionally, until slightly thickened. Remove skillet from heat. Beat in butter, 1 piece at a time, with wire whisk, adding the next piece only after the first has been completely beaten in and melted. When all of the butter has been beaten in, taste sauce and season with salt and pepper if desired. Remove and discard bay leaves and thyme sprig.
  • Place pork on warm serving plates and top with sauce. Sprinkle with crumbled bacon and the parsley.

1/3 cup dry white wine

  • In a heavy skillet heat the oil over moderately high heat until it is hot but not smoking, in it brown the pork chops, patted dry and seasoned with salt and pepper, and transfer them to a plate. Add 1 tablespoon of the butter to the skillet and in it cook the shallot, the cumin, the ground coriander, the zest, and the gingerroot over moderately low heat, stirring, until the shallot is softened. Add the wine, the broth, and the apricots, bring the liquid to a simmer, and in it braise the pork chops, covered, over moderately low heat for 20 minutes, or until they are tender. Transfer the chops to a serving plate with a slotted spatula and keep them warm. In a small bowl stir together well the remaining 1/2 tablespoon butter, softened, and the flour until the mixture is well combined, add the beurre manié to the braising liquid, and bring the sauce to a boil, stirring. Simmer the sauce for 1 to 2 minutes, or until it is thickened, stir in the fresh coriander and salt and pepper to taste, and pour the sauce over the pork chops.

1 habanero, seeded and finely chopped
2 tablespoons butter
2 tablespoons shagbark hickory syrup (or Maple Syrup)
24 golden raisins, finely chopped
6 tablespoons good apricot preserves
1/2 teaspoon white wine vinegar
2 teaspoons orange zest

  • In a non stick skillet over medium heat, melt the butter.
  • Add chopped Habanero, and salt, and soften the pepper for about 5 minutes. Reduce heat a bit, to medium-low.
  • Add the syrup, apricot preserves, and raisins.
  • Cut up any large pieces of apricots in the pan, it should be fairly smooth.
  • Allow the glaze to simmer for about 15 minutes, stirring often,or until thickened and darkened a bit, and the raisins are softened.
  • Do not let it boil.
  • Water can be added a bit at a time to keep the glaze from scorching.
  • Just before removing it from the heat add the vinegar.
  • Remove from the stove top and add the orange zest.
  • Allow to cool slightly, then rub on your favorite grilled meats.
  • Tastes good with a bit of fresh mint on top too.
