Time 50m

Number Of Ingredients 9

1/2 tsp dried rosemary
1/2 tsp dried oregano
1/2 tsp dried basil
1/2 tsp salt
1/8 tsp pepper
8 boneless, skinless chicken breast halves
1/4 c fat-free chicken broth
1 c all-fruit apricot preserves
1 Tbsp honey mustard

Steps:

  • 1. Preheat oven to 350; line a 9X13-inch baking pan with foil, spray with non-stick cooking spray. In a small bowl crush the spices, combine with salt and pepper, and rub over both sides of chicken breasts. Place in prepared pan; pour broth into pan. Bake for 20 minutes. In a small bowl mix preserves and mustard, brush or spoon over chicken and bake an additional 10-15 minutes until done.

Tips:

  • Choose the right chicken: For this recipe, bone-in, skin-on chicken thighs or breasts are best. The bones and skin will help keep the chicken moist and flavorful.
  • Use fresh herbs: Fresh rosemary is essential for this recipe. If you don't have fresh rosemary, you can use dried rosemary, but be sure to reduce the amount you use by half.
  • Don't overcrowd the pan: When browning the chicken, be sure not to overcrowd the pan. This will prevent the chicken from cooking evenly.
  • Cook the chicken until it is cooked through: Use a meat thermometer to check that the chicken is cooked through before removing it from the pan. The chicken should be cooked to an internal temperature of 165 degrees Fahrenheit.
  • Serve immediately: This dish is best served immediately after cooking. The chicken will be most flavorful and juicy when it is hot.

Conclusion:

Apricot rosemary chicken is a delicious and easy-to-make dish that is perfect for a weeknight meal. The combination of sweet apricots, savory rosemary, and tender chicken is sure to please everyone at the table. Serve this dish with rice, roasted vegetables, or a salad for a complete meal.
