1 1/4 cups water
1/3 cup oil
3 eggs
1 (16-oz.) can vanilla frosting (not whipped)
1/2 cup strawberry ice cream topping
2 or 3 (2.25-oz.) small (1-inch) chewy chocolate candies, unwrapped
2 tablespoons grated vanilla candy coating or almond bark (from 1-oz. cube)

1 can white cupcake icing, (with decorating attachments)
1 package Ferrero Rocher hazelnut chocolates
1 container strawberry jelly

  • Begin assembling by piping a pile of 'spaghetti' all over the top of your cupcake.
  • Add a hazelnut chocolate 'meatball' on top of the soft frosting.

Time 2h

Yield 10-12 servings

Number Of Ingredients 5

1 18.25-ounce box chocolate cake mix (plus required ingredients)
2 16-ounce tubs vanilla frosting
2 to 4 drops yellow food coloring 1/2 teaspoon cocoa powder
1 16-ounce bag frozen strawberries, thawed
White chocolate, for grating

Steps:

  • Make two 8-inch-round chocolate cakes as the cake mix label directs; cool completely. Crumble 1 cake into a bowl. Squeeze a handful of crumbs into a 2-inch ball; roll between your hands until smooth. Repeat to make 2 more cake balls.
  • Sprinkle some of the remaining cake crumbs on a clean surface. One at a time, roll the cake balls in the crumbs, pressing lightly to coat. If necessary, moisten the cake balls with water to help the crumbs stick.
  • Assemble the cake: Put the remaining whole cake on a serving plate or cake board. Spread about 1 1/2 cups vanilla frosting on the cake with an offset spatula; run the spatula around the sides to make it smooth.
  • Arrange the cake balls on the cake. Mix the remaining frosting, the yellow food coloring and cocoa in a bowl; transfer to a pastry bag with a small round tip. Pipe the yellow frosting around the cake balls in a figure-eight motion to look like spaghetti.
  • Make the strawberry sauce: Puree the strawberries in a food processor until slightly smooth with a few chunks. Spoon 1/2 cup strawberry puree around the meatballs to look like sauce.
  • Grate white chocolate on top of the cake to look like parmesan cheese. Serve the cake with the remaining strawberry puree on the side.

Create this fun cupcake recipe for April Fool's Day!

Provided by Lina D (Hip2Save Sidekick)

Categories     Desserts

Number Of Ingredients 6

9 oz. white cake mix box
16 oz. tub cream cheese or vanilla frosting
3 drops of yellow food coloring
3/4 cup low-sugar strawberry preserves (low-sugar has the best color)
24 hazelnut chocolates, unwrapped (I used Ferrero Rocher, but you could use anything that resembles a meatball)
2 tablespoons grated white chocolate

Steps:

  • Prepare your cupcakes according to package instructions. Let them cool.
  • Tint the frosting with the yellow food coloring. Spread a thin layer of tinted frosting on top of the cupcakes. Arrange the cupcakes on a serving platter close together.
  • Spoon the remaining tinted frosting into a piping bag with a Number 2 Wilton tip. Alternatively, you could use a Ziploc bag and snip a small corner from the bag (1/8 inch). Either piping method is fine!
  • Now, have fun piping the frosting all over the cupcakes to make the noodles (this was my favorite part!). Make sure to pile the "noodles" high and have some of the "noodles" hang over the edges of the cupcakes.
  • Mix the "meatball" chocolates with the strawberry preserves in a bowl to coat. Spoon some of the preserves on top of each cupcake. Place preserves-coated chocolate on top of each cupcake. With a spoon, drizzle cupcakes with the remaining strawberry preserves.
  • Sprinkle the grated white chocolate over the cupcakes to look like Parmesan cheese.
  • Enjoy and Happy April Fool's Day!
