Time 1h30m

Number Of Ingredients 11

3 lb chicken breasts, cut into large pieces
1 lime
1 tsp salt
1/2 tsp pepper
3/4 tsp paprika
1 can(s) black olives
1/4 c oil
1 large onion, chopped
1 medium green pepper, sliced (or cut into strips)
1 medium red pepper, sliced (or cut into strips)
1 1/2 c orange juice

Steps:

  • 1. Assemble all ingredients.
  • 2. Chop onion, slice peppers. Squeeze fresh lime juice (approx. 1/3 cup).
  • 3. Marinate chicken pieces in juice from the lime for at least 30 minutes. Combine salt, pepper and paprika; sprinkle over chicken.
  • 4. Brown chicken on all sides in oil.
  • 5. Place chicken in casserole or baking pan, add olives, onion, green and red pepper, and orange juice. Cover, bake at 350 for 45 minutes, or until chicken is tender.
  • 6. Serve with rice.

Tips:

  • Brine the chicken: This is a great way to add flavor and moisture to the chicken. You can use a simple brine made with water, salt, and sugar, or you can get creative and add other ingredients like herbs, spices, or citrus.
  • Use a variety of cooking methods: Don't just stick to one cooking method. Try roasting, grilling, baking, or frying the chicken to get different flavors and textures.
  • Don't overcook the chicken: This is the most common mistake people make when cooking chicken. Overcooked chicken is dry and tough. Cook the chicken until it reaches an internal temperature of 165 degrees Fahrenheit.
  • Let the chicken rest before serving: This allows the juices to redistribute throughout the chicken, making it more tender and flavorful.
  • Serve the chicken with a variety of sauces and sides: This will help to complement the flavor of the chicken and make it a more complete meal.

Conclusion:

Argentine chicken is a versatile and delicious dish that can be enjoyed in many different ways. Whether you're looking for a simple weeknight meal or a special occasion dish, there's an Argentine chicken recipe out there for you. So get cooking and enjoy!
