1 tbsp. olive oil
1 lb. ground spicy Italian sausage
1 onion, chopped
1 red bell pepper, chopped
3 garlic cloves, chopped
1 1/2 tbsp. chili powder
2 tsp. ground cumin
1 tsp. kosher salt, plus more to taste
3/4 tsp. ground black pepper, plus more to taste
1/2 tsp. ground cinnamon
2 15 oz. cans fire-roasted tomatoes, not drained
1 15 oz. can kidney beans, drained and rinsed
1 15 oz. can black beans, drained and rinsed
1 15 oz. can pumpkin puree
2 1/2 c. chicken broth
Roasted pumpkin seeds, sour cream, shredded sharp cheddar cheese and avocado, for garnish, if desired

Steps:

  • In a large Dutch oven, heat the oil over medium heat. Add the sausage and cook, stirring to break into pieces, until browned and cooked through, 8 to 10 minutes. Using a slotted spoon, transfer the sausage to a paper towel lined plate to drain.
  • Add the onion and bell pepper to the Dutch oven. Cook over medium, stirring, until softened, 10 to 12 minutes. Stir in the garlic, cumin, chili powder, 1 teaspoons salt, 3/4 teaspoon pepper and cinnamon. Cook, stirring, for 30 seconds.
  • Stir in the tomatoes, kidney beans, black beans, pumpkin puree, chicken broth and sausage. Bring to boil over medium-high. Reduce heat to medium-low, cover and cook, stirring occasionally, until the flavors meld, about 20 minutes.
  • Season the chili with salt and pepper. Serve, garnishing with pumpkin seeds, sour cream, cheese and avocado, if desired.

1 large onion, diced
1 green bell pepper, diced
2 (15 ounce) cans kidney beans, drained
1 (46 fluid ounce) can tomato juice
1 (28 ounce) can peeled and diced tomatoes with juice
½ cup canned pumpkin puree
1 tablespoon pumpkin pie spice
1 tablespoon chili powder
¼ cup white sugar

Steps:

  • In a large pot over medium heat, cook beef until brown; drain. Stir in onion and bell pepper and cook 5 minutes. Stir in beans, tomato juice, diced tomatoes and pumpkin puree. Season with pumpkin pie spice, chili powder and sugar. Simmer 1 hour.

3 lbs ground beef
2 (16 ounce) cans red kidney beans
2 medium onions, chopped
3 (15 ounce) cans diced tomatoes
2 tablespoons chili powder
1/4 teaspoon red pepper
1 teaspoon sugar

2 bay leaves
1 cup fresh mushrooms

  • Brown the ground beef and pour off grease.

1 lb dried black beans (used quick soak method, then simmered with recipe, OR use 2 cans black beans, drained and rinsed)
1 (15 ounce) can Libby's canned pumpkin
1 (4 ounce) can diced green chilies
3 cups reduced-sodium chicken broth (add more if a thinner chili is preferred)
1 (14 1/2 ounce) can petite diced tomatoes
1 lb ground bison meat (or whatever meat you prefer)
1 cup chopped onion
1/2 teaspoon garlic powder
1 teaspoon cumin
1 1/2 teaspoons chili powder (add more for more heat)
1/4 teaspoon cayenne (add more for more heat)
1/8 teaspoon nutmeg
