Provided by Sandra Lee

Time 25m

Yield 4 servings

Number Of Ingredients 7

Nonstick cooking spray
4 (5 to 6-ounce) sea bass filets, about 3/4-inch thick
1 (12-ounce) jar marinated artichoke hearts
1/2 cup prepared basil pesto
1/8 teaspoon red pepper flakes
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F. Spray a baking dish with cooking spray and set aside.
  • Put the sea bass filets in one layer, skin side up, into the baking dish. Drain the artichoke hearts, pouring the liquid over the fish. Let marinate while you make the pesto.
  • To make the pesto, put the artichoke hearts into the bowl of a food processor. Add the pesto and red pepper flakes and process until chunky. Scrape down the sides of the bowl and start processing again. Drizzle in 1 to 2 tablespoons of the olive oil, adding more as needed until you get the consistency that is thick but pourable. Taste and add salt and pepper if needed. Can be refrigerated for up to 1 week.
  • Bake the sea bass until it is cooked through, 10 to 12 minutes. Spoon about 2 tablespoons of the pesto each onto 4 plates. Place the fish onto the pesto and also top with a generous spoonful of the pesto.

Categories     Blender     Citrus     Garlic     Vegetable     Appetizer     Sauté     Artichoke     Spring     Wheat/Gluten-Free     Peanut Free     Soy Free     No Sugar Added

Yield Makes 10 servings

Number Of Ingredients 12

2 medium lemons
4 large artichokes
2 tablespoons extra-virgin olive oil
1 medium onion, thinly sliced
1 leek, white and pale green parts only, coarsely chopped
4 heads green garlic,* toughest green part removed and coarsely chopped
1 medium Yukon Gold potato, peeled and cut into 1-inch chunks
4 cups chicken stock or low-sodium chicken broth
1 tablespoon kosher salt
1 teaspoon freshly ground black pepper
Nettle-walnut pesto crostini
*Green garlic is young garlic before it begins to form cloves. It resembles a baby leek, with a long green top and white bulb, and has a milder flavor than mature garlic. If you can't find green garlic, mild elephant garlic makes a good substitute. Use 4 large cloves.

Steps:

  • Fill large bowl with ice water and juice from 1/2 lemon, then drop same lemon half into water. Cut off artichoke stems and discard. Using serrated knife, cut top inch off artichokes. Working with 1 artichoke at a time, bend back outer leaves until they snap off close to base. Discard several more layers of leaves in same manner until exposed leaves are pale green at top and pale yellow at base. Cut off green tips. Gently pull open center of artichoke and, using melon baller or spoon, scoop out small, purple-tipped leaves and fuzzy choke. Using sharp paring knife, trim outside of base until no dark green areas remain, then quarter artichoke, rub cut surfaces with other lemon half, and drop into water. Trim remaining artichokes in same manner.
  • In heavy 6-quart pot over moderate heat, heat oil until hot but not smoking. Add onions, leek, and garlic, and sauté, stirring occasionally, until soft, about 8 minutes. Drain artichokes and add to pot along with potato chunks, chicken stock, salt, pepper, and 4 cups water. Bring to simmer, then reduce heat to low, cover, and cook until artichokes and potato are soft, about 20 minutes.
  • Working in 4 batches, purée soup in blender until very smooth, then pour through fine-mesh strainer into clean pot. Set over moderately low heat and stir in juice of remaining lemon. Ladle into shallow bowls and gently place nettle-walnut pesto crostini in center of each.

Tips:

  • Use fresh artichokes if possible. Fresh artichokes have a more vibrant flavor and more tender texture than canned or frozen artichokes.
  • Trim the artichokes properly. To trim the artichokes, remove the tough outer leaves and the sharp tips of the leaves. You should also remove the fuzzy choke from the center of the artichoke.
  • Cook the artichokes until they are tender. Artichokes can be cooked in a variety of ways, including boiling, steaming, and roasting. The artichokes are tender when you can easily pierce them with a fork.
  • Make the pesto ahead of time. Pesto can be made ahead of time and stored in the refrigerator for up to 5 days. This makes it a great option for busy weeknights.
  • Use a good quality olive oil. The olive oil you use in the pesto will have a big impact on the flavor of the soup. Use a good quality extra virgin olive oil for the best results.
  • Season the soup to taste. The amount of salt and pepper you add to the soup will depend on your personal preferences. Start with a small amount and add more to taste.

Conclusion:

Artichokes are a healthy and delicious ingredient that can be used in a variety of dishes. This artichoke soup with pesto is a great way to enjoy the unique flavor of artichokes. The soup is creamy and flavorful, with a bright pop of flavor from the pesto. It's a perfect soup for a light lunch or dinner, and it's also a great way to use up leftover artichokes.
