Grilled Halibut image

This grilled halibut is a great way to enjoy fish any day of the week. Topped with my garlic thyme butter, this seafood is perfectly tender and flaky without coming off the grill dry and bland. Bonus level? It's ready in less than 30 minutes.

Categories     Main Dish

Time 25m

Number Of Ingredients 7

4 4-6 oz skinless halibut fillets
salt (to taste)
pepper (to taste)
3 cloves garlic cloves (minced)
4 Tablespoons unsalted butter (melted)
1 Tablespoons fresh thyme
juice of 1 whole lemon

Steps:

  • Preheat. Preheat your grill 375 degrees F.
  • Prep the fish. Place the halibut fillet in a shallow baking dish. Combine all of the ingredients for the butter in a small bowl and pour over your halibut fillets.
  • Season. Gently toss the fillet to ensure all sides are evenly coated in the butter. Season all sides with freshly cracked pepper and salt.
  • Oil the grill. Moisten a paper towel with cooking oil. Pinch the paper towel between tongs and wipe it on the grates of your grill to prevent the halibut from sticking while it grills.
  • Grill the halibut. Place the seasoned halibut directly on the grill grates. Close the lid and grill for 5-7 minutes. Flip them, close the lid, and grill until the internal temperature of the halibut reads 145 degrees F. You want your fish to be opaque and just start to flake.
  • Serve. Remove the grilled halibut from the grill. Serve hot with lemon wedges.

Kosher salt and freshly ground black pepper
Canola oil, for pan-frying
3 cups cooked sushi rice, at room temperature
1/2 pound haricots verts or green beans
1 cup Fish Sauce Vinaigrette, recipe follows
3 tablespoons tobiko, plus more for garnish
Four 4-ounce skinless halibut fillets
Olive oil, for grilling
Wood sorrel, for garnish
1/2 cup olive oil
1/2 cup fish sauce
1/4 cup rice wine vinegar

2 tablespoons sugar
1 tablespoon minced fresh chives

1 teaspoon minced ginger
1 teaspoon toasted sesame oil
1 serrano chile, minced
1 clove garlic, minced
Zest and juice of 1 lime

Steps:

  • Bring a large pot of salted water to a boil. Preheat a grill to medium-high heat. Preheat a wood-fired or regular oven to 400 degrees F.

Remove the fish to a sheet tray. Transfer to the oven until cooked through, 3 to 5 minutes.

OVEN-GRILLED HALIBUT, FLOUNDER, OR SEA BASS

Oven-Grilled Halibut, Flounder, or Sea Bass image

This is a fast and easy method for preparing firm, thick fish fillets. A heavy skillet with a ridged bottom will produce nice grill marks when preheated in the oven. Serve this fish with stir-fried Asian noodles or spaghetti tossed with sautéed bok choy, green onions, and any type of sprouts, seasoned with minced garlic, ginger, rice vinegar, and sesame oil.

Yield makes 4 servings

Number Of Ingredients 8

1 pound firm fish fillets, such as halibut, flounder, or sea bass (about 4 pieces)
2 tablespoons vegetable oil
1 teaspoon sesame oil
1/4 teaspoon hot chili oil
2 garlic cloves, minced
1 tablespoon freshly grated lemon zest
1/2 teaspoon kosher salt
1/8 teaspoon freshly ground pepper, preferably white

Steps:

  • Position the oven racks so that the top rack is 5 to 6 inches from the top of the oven. Coat a ridged cast-iron skillet with nonstick spray and place it in the oven on the top rack. Preheat the oven to convection roast at 500°F.
  • Rub the fish fillets with the vegetable, sesame, and chili oils. Mix the garlic, lemon zest, salt, and pepper and rub both sides of the fillets with the mixture. Place the fish on the preheated skillet and cook until lightly browned, about 3 minutes.
  • Turn the fish over carefully and cook for 5 to 7 more minutes or until the fish flakes easily when tested with a fork but is still moist. Total cooking time is approximately 10 minutes.

Tips:

  • Choose the right halibut steak: Look for halibut steaks that are at least 1-inch thick and have a firm, slightly springy texture. Avoid steaks that are thin or have a mushy texture.
  • Marinate the halibut: Marinating the halibut in a flavorful marinade will help to tenderize the fish and add flavor. You can use a simple marinade made with olive oil, lemon juice, herbs, and spices, or you can try a more complex marinade with Asian flavors, such as soy sauce, mirin, and ginger.
  • Grill the halibut over medium-high heat: Grilling the halibut over medium-high heat will help to create a nice sear on the outside of the fish while keeping the inside moist and flaky. If you are using a gas grill, preheat the grill to medium-high heat and cook the halibut for 4-5 minutes per side, or until the fish is cooked through.
  • Serve the halibut with a flavorful sauce: Halibut is a versatile fish that can be served with a variety of sauces. You can try a simple sauce made with melted butter and lemon juice, or you can try a more complex sauce with Asian flavors, such as a teriyaki sauce or a sweet and sour sauce.

Conclusion:

Asian grilled halibut is a delicious and healthy meal that is perfect for any occasion. The fish is tender and flaky, with a slightly sweet and savory flavor. The marinade and sauce add even more flavor to the dish, making it a truly memorable meal. If you are looking for a new and exciting way to cook halibut, give this recipe a try. You won't be disappointed.
