ASIAN SHRIMP NOODLE SALAD

Asian Shrimp Noodle Salad image

This is the easiest of salads to prepare and it's healthy too with lots of fresh veggies and no oil. I think it tastes best if you let it marinate in the dressing for an hour or so but you can serve it right away as well. If you like a bit of kick, add some chopped hot chili peppers.

Time 25m

Number Of Ingredients 13

3 ounce package mung bean noodles*
1 tablespoon vegetable oil
1 pound medium shrimp, peeled, deveined
Kosher salt
7 medium cloves garlic, finely minced
1 cucumber, peeled, seeded and sliced into thin strips
1 carrot, sliced into thin strips (about 1/2 cup)
1 red jalapeno, very thinly sliced or minced (with seeds if you like it hot)
1/2 cup mixed roughly chopped mint, cilantro, and basil

Add the vegetable oil and when it shimmers, add the shrimp, season with salt and cook turning once until pink and but not cooked through, 1-2 minutes. Add the garlic and cook stirring until the shrimp are coated, about 1 minute. Add the shrimp and garlic to the noodles along with the cucumber, carrot, jalapeno, herbs, lime juice, fish sauce and sugar and toss. (If the noodles clump, add up to 1/4 cup water to make mixing easier.) Season with salt or fish sauce to taste. Transfer to a serving platter. Transfer salad to a large platter and scatter the scallions on top. Serve at room temperature.

ASIAN SHRIMP AND NOODLE SALAD

Asian Shrimp and Noodle Salad image

Yield Makes 2 servings

Number Of Ingredients 7

7 tablespoons bottled oil and vinegar dressing
5 to 6 teaspoons fish sauce (nam pla) or soy sauce
4 tablespoons chopped fresh basil
1 tablespoon minced peeled fresh ginger
8 ounces cooked peeled shrimp
6 ounces thin dried Asian noodles (somen) or vermicelli
1/4 unpeeled cucumber, seeded, cut into matchstick-size strips

Steps:

  • Whisk dressing, 5 teaspoons fish sauce, 3 tablespoons basil and ginger in large bowl to blend. Mix shrimp into dressing and let marinate 10 minutes.
  • Cook noodles in medium pot of boiling salted water until just tender but still firm to bite. Drain; rinse under cold water to cool quickly. Drain again. Add noodles and cucumber to shrimp. Toss to coat. Season salad to taste with salt and pepper; add remaining 1 teaspoon fish sauce, if desired. Divide salad between 2 plates. Sprinkle with remaining 1 tablespoon basil and serve.

Tips:

  • Use fresh ingredients: The fresher the ingredients, the better the salad will taste. This is especially true for the shrimp, vegetables, and herbs.
  • Cook the shrimp properly: Overcooked shrimp will be tough and rubbery. Cook them just until they are pink and opaque, about 2-3 minutes per side.
  • Use a variety of vegetables: This will give the salad more flavor and texture. Some good options include shredded carrots, sliced cucumber, chopped red onion, and halved cherry tomatoes.
  • Use a flavorful dressing: The dressing is what really brings all the flavors of the salad together. A good option is to use a combination of soy sauce, rice vinegar, sesame oil, and honey.
  • Add some crunch: This will help to balance out the other textures in the salad. Some good options include chopped peanuts, crispy wonton strips, or fried shallots.

Conclusion:

This Asian noodle salad with shrimp is a delicious and healthy meal that is perfect for a quick lunch or dinner. It is packed with flavor and texture, and it is sure to please everyone at the table. So next time you are looking for a new and exciting salad recipe, give this one a try. You won't be disappointed!
