2 teaspoons vegetable oil
1 onion, chopped
1 green chile pepper, seeded and minced
¼ teaspoon ground coriander
¼ teaspoon ground cumin
¼ teaspoon garam masala
¼ teaspoon paprika
salt and ground black pepper to taste
1 (14 ounce) can baked beans in tomato sauce (such as Heinz®)

Steps:

  • Heat oil in a saucepan over medium heat. Cook and stir onion in hot oil for about 2 minutes. Stir chile pepper into onion; continue to cook and stir until the onion softens slightly, 2 to 3 minutes more. Season with coriander, cumin, garam masala, paprika, salt, and pepper; stir. Pour beans into saucepan, mix well, and cook until hot, about 3 minutes.

I needed to put together something for dinner, so combined several things, working off one of my already published recipes, and came up with this. The flavors worked well together. However, I actually used Recipe #204223 for the terikyaki sauce, and it was great!

1 lb ground turkey or 1 lb ground beef
1 onion, chopped
2 garlic cloves, minced
1/2 cup green pepper, chopped
1 (28 ounce) can busch's best baked beans, undrained
2 -4 tablespoons teriyaki sauce or 2 -4 tablespoons stir-fry sauce
1 cup tomato sauce
1 tablespoon molasses
1 tablespoon honey
1/2 teaspoon salt
1/2 tablespoon dry mustard
2/3 cup buttermilk or 2/3 cup milk
2 cups baking mix
1 egg, beaten

Steps:

  • Preheat oven to 425°F.
  • In an ovenproof skillet (cast iron works great), brown the ground turkey with the onions, garlic and green pepper until meat is no longer pink and veggies are soft. Drain any grease.
  • Add remaining ingredients, except for topping, and simmer gently, stirring occasionally for 10-15 minutes.
  • Combine the topping ingredients and spread over the meat and bean mixture in the skillet.
  • Bake for 20 minutes or until topping is golden brown.

1 cup dried kidney beans
1/2 cup dried cannellini beans
1/2 cup dried Great Northern or navy beans
2 sprigs fresh thyme
1 tablespoon cumin seeds
1 tablespoon olive oil
1 large onion, chopped
1 carrot, chopped
1/2 pound smoked slab bacon, in 1/2-by-1-inch nuggets
1 jalapeno pepper, seeded and chopped
2 cloves garlic, chopped
1/2 cup crushed canned tomatoes
4 ripe plum tomatoes, diced
1/4 cup maple syrup
1/4 cup light brown sugar
1 bay leaf
Grated rind of 1 orange
1/2 tablespoon crushed black peppercorns
1/3 cup chopped fresh cilantro leaves
1/4 cup cider vinegar, or more, to taste
Salt to taste

Steps:

  • Place all beans in a bowl, cover with water to a depth of 2 inches, add thyme and soak at least 4 hours.
  • Heat a heavy 3-quart casserole. Add cumin seeds, and cook, stirring, until they dance around and smell toasty. Remove them.
  • Add the oil, onion, carrot and bacon to casserole, and saute over medium heat 10 minutes, until the bacon is golden. Stir in the jalapeno, garlic and toasted cumin seeds.
  • Preheat oven to 250 degrees.
  • Drain beans, and add them along with the canned and fresh tomatoes, maple syrup, brown sugar, bay leaf, orange rind and crushed peppercorns. Stir in all but 1 tablespoon of the cilantro, and add 3 cups of water. Cover, and bring to a slow simmer. Place in the oven, and cook 2 hours.
  • Add vinegar and salt to taste. Return to the oven 2 1/2 hours longer, until the liquid has been absorbed but the beans are still moist. Adjust seasonings, adding more vinegar and salt if needed. Sprinkle with remaining cilantro, and serve.
