1/2 cup water
4 eggs
Salt and pepper

Steps:

  • In a mixing bowl, break the matzo into 1-inch pieces. Bring the water to a boil and pour over the matzos. Quickly toss the matzo, then drain off any excess. In a bowl, beat the eggs with a fork. Mix the eggs, salt and pepper into the matzo. Over high heat, heat the butter and oil in a large saute pan. Add the matzo and fry until crisp. Flip over to fry the other side, breaking into pieces as it cooks. Serve with Maple syrup, or preserves.

2 tablespoons Gefen Extra-Virgin Olive Oil or butter, divided
1/2 cup cherry tomatoes
1/2 teaspoon Haddar Kosher Salt, divided
1/2 cup asparagus, cut into 1-inch pieces (see note)
3 eggs
1/4 teaspoon black pepper
2 pieces Manischewitz Matzo, broken into 1-2 inch pieces
2 tablespoons goat cheese, crumbled
dill for garnish

Steps:

  • Heat a medium nonstick pan over medium heat and add one-tablespoon butter or oil.
  • Add tomatoes and 1/4 teaspoon of salt and sauté until the tomatoes just start to soften, about five minutes.
  • Add asparagus and sauté for two to three more minutes, until tomatoes are browned and starting to burst and asparagus is bright green and tender. Set aside.
  • In a medium bowl, whisk eggs together with 1/4 teaspoon salt and 1/4 teaspoon black pepper.
  • Soak matzah pieces in a small bowl of warm water or in a mesh colander under warm water for 10 seconds to soften slightly.
  • Drain matzah and add to egg mixture and combine.
  • Wipe off the nonstick pan and heat over medium heat and add other tablespoon of butter or oil. Add the egg mixture and sauté over medium heat while stirring until eggs are set, about three minutes.
  • Divide matzah brei evenly on two plates. Top with tomato and asparagus mixture, goat cheese and dill. Serve immediately.

1/2 pound medium asparagus
3 tablespoons butter or olive oil
1 cup thinly sliced onions
5 matzohs
6 eggs, beaten
Salt and freshly ground black pepper
Freshly grated Swiss cheese (optional)

Steps:

  • Snap the ends off the asparagus where they break naturally. Peel the spears. Cut the asparagus in one-inch lengths.
  • Place the asparagus in a steamer or in a pot of simmering water and steam or cook about three minutes, until they are just tender and still bright green. Drain the asparagus, if necessary, and refresh under cold running water. Dry them well.
  • Heat a tablespoon of the butter or oil in a large nonstick skillet. Saute the onions over medium-low heat until they are golden, about six minutes. Remove the onions from the pan and mix them with the asparagus.
  • Crumble the matzohs and soak them in a bowl of hot water about 30 seconds. Drain well and squeeze out as much water as possible. Mix the eggs and matzohs together in a bowl. Season with salt and pepper. Stir in the onions and asparagus.
  • Heat the remaining butter or oil in the skillet. Add the matzoh mixture and cook over medium-high heat several minutes, until the mixture sets on the bottom and around the edges. Cover the skillet with a large plate and, holding both plate and skillet together, flip them over so the matzoh brei is cooked side up on the plate. Slide it back into the pan and cook the second side. Cut it in wedges and serve with a sprinkling of grated cheese, if desired.

1 pound medium asparagus, trimmed
3 cups small-curd cottage cheese (4% milkfat; 24 ounces)
1/4 cup finely chopped fresh dill
1 large egg, lightly beaten
1/2 teaspoon black pepper

For topping
1/2 stick (1/4 cup) unsalted butter
2 bunches scallions, trimmed and cut into 1-inch pieces

  • Make crêpes:
  • Blend milk, matzo meal, eggs, oil, and salt in a blender until smooth. Let batter stand 30 minutes.
  • Stir batter before using. Lightly brush a 10-inch nonstick skillet with oil and heat over moderately high heat until hot but not smoking. Holding skillet off heat, pour in 1/3 cup batter, immediately tilting and rotating skillet to coat bottom. (If batter sets before skillet is coated, reduce heat slightly for next crêpe.)   • Stir together cottage cheese, chopped stalks, dill, egg, pepper, and salt.
  • Assemble blintzes:
  • Put 1 crêpe, paler side up, on a work surface and spread a scant 1/3 cup of filling in a horizontal line just below center of crêpe, leaving a 3/4-inch border at each end. Fold in sides of crêpe over ends of filling, then, beginning at bottom, roll up to enclose filling. Transfer, seam side down, to a lightly buttered 15- by 10-inch shallow baking pan. Fill and transfer remaining 11 crêpes in same manner.
  • Bake blintzes, covered with foil, until filling is hot, 30 to 35 minutes.
  • Make topping just before blintzes are ready to serve:
  • Heat butter in a 10- to 12-inch skillet over moderate heat until foam subsides. Add scallions and cook, stirring, until tender, about 5 minutes. Stir in asparagus tips, salt, and pepper and cook, stirring, until asparagus is heated through, 1 to 2 minutes. Remove from heat and stir in dill. Spoon topping over blintzes.

4 large eggs
1/8 teaspoon ground nutmeg
Coarse salt
2 tablespoons butter

Steps:

  • Break each matzo square into about 8 pieces; place in a medium bowl. Add enough boiling water to cover, and soak until moistened, 2 or 3 minutes; drain. Squeeze well with hands to remove excess water.
  • In a medium bowl, beat eggs with nutmeg and 1/2 teaspoon salt; add softened matzo, and mix.
  • Heat 1 tablespoon butter in an 8-inch nonstick skillet over medium heat, swirling to coat; add matzo mixture, and press in gently. Cook until browned on underside, 4 to 6 minutes; carefully invert cake onto a plate. Heat remaining tablespoon butter in skillet, and slide cake back into skillet. Matzo, a cracker-like unleavened bread, gets soft and chewy when it's soaked and scrambled with eggs in this traditional dish. Some people like sweet matzo brei sprinkled with cinnamon sugar, but I am on Team Savory Brei 4ever!

2 tablespoons olive oil or unsalted butter
1 large shallot, finely chopped
Kosher salt and freshly ground black pepper
4 sheets matzo, broken into approximately 1-inch pieces
4 large eggs
Splash heavy cream
3 ounces fresh spinach, chopped
1/2 cup shredded mozzarella
Hot sauce and ketchup, for serving

Steps:

  • Heat the oil or butter in a large skillet over medium heat. Add the shallot and a pinch of salt and pepper. Cook, stirring occasionally, until soft and translucent, about 5 minutes.
  • Meanwhile, fill a medium bowl with cold water and submerge the matzo. Soak for 1 minute, then drain and set aside. In a separate medium bowl, whisk together the eggs and heavy cream until homogenous. Stir in the matzo and set aside.
  • Add the spinach to the shallots, one handful at a time, stirring until wilted. Add another pinch of salt. Pour in the egg mixture and cook until the bottom is set. Use a spatula to gently pull the bottom cooked parts to the sides of the skillet to make space for more of the mixture to cook. Add the cheese. Repeat this gentle pulling process until a majority of the mixture is set, 1 to 2 more times, then turn off the heat. The eggs should still be quite wet, but they'll continue to cook a bit in the skillet. Continue folding them gently, and once they've reached your desired firmness, remove them from the skillet and serve them immediately. Top with the hot sauce and ketchup.

2 sheets of matzah, broken into 4cm pieces
2 large eggs
½ tsp salt
1 tbsp butter

Steps:

  • Put the matzah pieces in a large flat bowl or tray. Pour over 150ml of hot water and make sure all the matzah is covered. Set aside to absorb the water for about a minute, making sure they're evenly soaked. You want it a bit puffy but not disintegrating. Discard the excess water.
  • Beat the eggs in a large bowl with the salt and add the matzah pieces. Stir to combine.
  • Heat the butter in a 25cm frying pan over medium heat until it foams. At this point, you can either pour in all of the egg and matzah mixture, and spread it in a flat layer in the pan, or form into four smaller patties. Leave the matzah brei to set for about 4-5 mins - it should be golden on the base.
  • Use a spatula to flip the individual matzah brei or smaller patties over, and cook them for another 4-5 mins until golden brown. Serve immediately with a sprinkle of salt or your choice of toppings.
