While this delicious potato skillet is a wonderful side dish, we find it satisfying enough to be a main course, too. The skillet preparation takes less time than it does to bake an au gratin casserole or scalloped potatoes-but it's still good old-fashioned comfort food at its best! -Marie Peterson, DeForest, Wisconsin

An incredibly easy potato dish that is tasty and filling as a main course or side dish. This is the simplest version I came up with to get the kids to eat it. But you can substitute a stronger cheese, add more veggies or meat to make it heartier.

AU GRATIN SWEET PEAS

AU GRATIN SWEET PEAS image

Categories     Vegetable

Yield 4 to 6 servings

Number Of Ingredients 10

1 teaspoon plus 2 tablespoons butter
1 cup minced onions
Salt
Freshly ground white pepper
2 tablespoons all-purpose flour
2 cups whole milk
4 cups sweet green peas, blanched
1/2 cup fine dried bread crumbs
Essence
4 ounces sharp cheddar cheese, grated

Steps:

  • Preheat the oven to 400 degrees F. Grease an 8 cup oval gratin dish with 1 teaspoon of the butter. In a large sauté pan, over medium heat, melt the remaining 2 tablespoons of the butter Add the onions. Season with salt and pepper. Sauté for 2 minutes. Add the flour and cook for 1 minute, stirring constantly. Stir in the milk and bring to a simmer. Cook for 4 to 6 minutes or until the mixture coats the back of a spoon. Add the peas and mix thoroughly. Pour into the prepared pan. Season the bread crumbs with Essence. Sprinkle the bread crumb mixture over the peas. Top with the grated cheese. Place in the oven and cook until the peas are bubbly and the top is golden, about 10 to 12 minutes. Spoon onto serving plates and serve.

Tips:

  • Use Fresh, High-Quality Ingredients: Fresh sweet peas are essential for this recipe. Look for bright green, plump peas. Frozen peas can also be used, but they should be thawed and drained before cooking.
  • Cook the Peas Properly: Overcooked peas become mushy and lose their flavor. Cook them just until they are tender-crisp, about 3-5 minutes.
  • Make a Flavorful Sauce: The sauce is what brings this dish together. Use a good quality white wine and a flavorful cheese, such as Parmesan or Gruyère. Don't be afraid to experiment with different herbs and spices to create a sauce that suits your taste.
  • Don't Overcrowd the Pan: When you add the peas to the pan, don't overcrowd them. If the pan is too crowded, the peas will steam instead of sautéing. This will result in mushy peas.
  • Serve Immediately: This dish is best served immediately after it is made. The peas will start to wilt if they sit for too long.

Conclusion:

Au gratin sweet peas are a delicious and elegant side dish that is perfect for any occasion. With its creamy sauce, tender-crisp peas, and cheesy topping, this dish is sure to please everyone at your table. So next time you're looking for a side dish that is both delicious and easy to make, give au gratin sweet peas a try. You won't be disappointed!
