AUNT HELEN'S FRIED PEACH PIES
If you grew up watching your mom make fried pies, then these fried peach pies will bring back memories. Aunt Helen's are delicious! The sweet, warm, peach center is the perfect match for the soft and crunchy biscuit crust. We sprinkled ours with a little bit of powdered sugar to make it special. We can't wait to try other fillings.

Steps:
- Combine the first four ingredients in 2 qt heavy sauce pan. Bring to boil. Stirring occasionally.
- Boil for about 30 minutes on med/high heat then reduce heat to medium. Stirring occasionally.
- Continue to boil on medium heat, stirring occasionally, for about 30 more minutes. As peaches become tender and syrup begins to thicken, mash and cut peaches with a spoon until they become like pie filling.
- Roll out biscuits on a floured surface to about a 5 inch oval shape (I use parchment because it won't stick).
- Fill the dough with about 1 1/2 tablespoon of cooled filling. Fold over and crimp and seal edges.
- Fry in skillet with about 1/2 inch deep (hot) Crisco. Fry on med/low heat 2-3 minutes on each side until golden brown. Fry 2-3 pies at a time.
- Remove to absorbent paper towels.
- *Note: May use 1/4 cup less sugar if you don't like them as sweet.

AUNT HELENS PECAN PIE
A little less sweet than some Pecan Pies (about half the sugar of most recipes I've seen). A family favorite. Update: My original copy of this says to bake for an additional 30-32 min. This hasn't been working for me lately so I increased it to 40-45 min. When finished the center should have a slight jiggle to it but the whole pie should not slosh. If any reviewer can give me an accurate time (I am admittedly pie challenged) I will edit the recipe to reflect that.

Steps:
- Preheat oven to 425°F. Mix together peaches and lemon juice. Stir together sugar, flour and cinnamon. Add to peaches, stir to coat the peaches. Pour into the bottom pie crust, dot with butter. Cover with top crust, seal and flute the edges, cut four slits in the crust for steam to escape. Cover the edges loosely with foil to prevent over browning. Bake 35 to 45 minutes, until the crust is browned and the filling begins to bubble through the crust.
Tips:
- For the best flavor and texture, use ripe, fresh peaches. Choose peaches that are slightly firm to the touch and have no bruises or blemishes. - Use a sharp knife to peel and slice the peaches. This will help to prevent the peaches from becoming bruised or mashed. - If you don't have a pastry cutter, you can use two forks to cut the butter into the flour. Just be sure to work quickly so that the butter doesn't melt. - When you're rolling out the dough, be careful not to overwork it. Overworking the dough will make it tough. - When you're frying the pies, be sure to keep the oil at a consistent temperature. If the oil is too hot, the pies will burn. If the oil is too cold, the pies will not cook through. - Serve the pies warm with a scoop of vanilla ice cream or whipped cream. Conclusion:
Aunt Helen's Fried Peach Pies are a delicious and easy-to-make dessert. With a crispy crust and a sweet, juicy filling, these pies are sure to be a hit with your family and friends. So next time you're looking for a special treat, give these pies a try. You won't be disappointed.
