AUNT ROSIE'S EGGLESS RAISIN CAKE

Aunt Rosie's Eggless Raisin Cake image

This was a recipe from Hilma Murphy, my best friend's mother. She passed away when I was 12. She always made this cake for us, and after her death, we looked through her recipes and I copied this one down. Easy to make, definitely a comfort cake that is wonderful when still warm!

Time 1h5m

Yield 12 squares

Number Of Ingredients 9

1 cup raisins
2 cups water
1/2 cup margarine
1 3/4 cups flour
1/2 teaspoon salt
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1 teaspoon baking soda
1 cup sugar

Steps:

  • In large saucepan boil 1 cup raisins with 2 cups water for 10 minutes.
  • Take from fire, add 1 stick margarine and let cool to room temperature.
  • In same saucepan with liquid, raisins and butter, stir in remaining ingredients until smooth.
  • Bake in 10x7 pan at 350 degrees for 30-35 minutes, or until center tests done.

Tips:

  • Choose the right cake mix. Use a yellow or white cake mix for a classic Gob cake. For a richer flavor, use a chocolate or red velvet cake mix.
  • Don't overmix the batter. Overmixing can make the cake tough. Mix the batter until it is just combined.
  • Bake the cake in a tube pan. This will help the cake rise evenly.
  • Make the pudding while the cake is baking. This will save time and ensure that the pudding is cool when you are ready to use it.
  • Use a food processor or blender to make the frosting. This will make the frosting smooth and creamy.
  • Chill the cake before frosting it. This will help the frosting set properly.
  • Decorate the cake with your favorite toppings. Some popular options include chopped nuts, sprinkles, or fresh fruit.

Conclusion:

Aunt Rosie's Gob cake is a delicious and impressive dessert that is perfect for any occasion. With its moist cake, creamy pudding, and fluffy frosting, this cake is sure to be a hit. Follow the tips above to make the best Gob cake possible. Enjoy!
