COCONUT OATMEAL COOKIES

Coconut Oatmeal Cookies image

My grand-daughter sent me this recipe she says they are delicious. These cookies work very well using Splenda or Splenda for Baking,in place of the white sugar. (note, I have been trying different ways to cut down on sugar, using 2 tablespoons molasses in stead of the brown sugar works good and using the splenda for baking, I have also used all butter instead of shortening & butter with good results)

OATMEAL COCONUT DREAM COOKIES RECIPE

Oatmeal Coconut Dream Cookies Recipe image

Yield 20

Number Of Ingredients 12

1 large egg
1/2 cup butter (or marg)
3/4 cup brown sugar
1/3 cup cane sugar
2 teaspoons vanilla extract
1 cup flour
1 cup Old Fashioned Oats
1/2 teaspoon salt
1/2 teaspoon baking soda
3/4 cup shredded sweetened coconut
1/2 cup chopped walnuts
1 1/2 cups milk chocolate chip

Steps:

  • Preheat oven to 350 degrees.
  • In a large bowl, combine egg, and softened margarine.
  • Mix in the sugars and vanilla.
  • Continue mixing and add flour, old fashioned oats, salt, baking soda, coconut walnuts, and chocolate chips.
  • Scoop into small bowls and place on cookie sheet.
  • Bake for 8-10 minutes or until the edges are golden.

Tips:

  • Choose the right wattleseed. There are many different types of wattleseed, each with its own unique flavor. For this recipe, we recommend using a sweet variety, such as the Acacia victoriae or Acacia acuminata.
  • Grind the wattleseed finely. This will help to release its flavor and make it easier to incorporate into the cookies.
  • Toast the coconut. Toasting the coconut will bring out its flavor and make it more fragrant.
  • Use good-quality oats. We recommend using old-fashioned rolled oats for this recipe. They will provide a chewy texture to the cookies.
  • Be careful not to overmix the dough. Overmixing will make the cookies tough. Mix just until the ingredients are combined.
  • Chill the dough before baking. This will help the cookies to hold their shape and prevent them from spreading too much.
  • Bake the cookies until they are golden brown. This will ensure that they are cooked through.

Conclusion:

These Australian Wattleseed Oatmeal Coconut Cookies are a delicious and nutritious snack that is perfect for any occasion. They are easy to make and can be customized to your own taste. So next time you are looking for a healthy and satisfying cookie recipe, give these cookies a try!
