2 large green peppers, chopped
4 celery ribs, chopped
1 28 oz can stewed tomatoes
2 tsps salt

4 bay leaves
1 1/2 tsp sugar
1/2 cup chpped green onions
1/2 cup chopped parsley

  • Peel and devein shrimp, reserving the peel. Place peels in a small saucepan, add water to cover. Bring to a boil, let cook for 15 minutes. Strain and remove broth. Discard peels. Place oil in large heavy pot and place over medium heat. Add onions, green peppers and celery. Saute, stirring until vegetables are soft, about 5 minutes. Stir in tomates, salt, peppers, bay leaves, thyme, sugar and shrimp stock. Heat to boiling, stirring occasionally. Stir in shrimp, cook until they turn pink, 5 to 7 minutes. (Do NOT overcook) Discard bay leaves. Stir in the green onions and parsley. Serve over steaming, fluffy rice.

Tips:

  • Use fresh shrimp: Fresh shrimp will give your dish the best flavor. If you can, buy shrimp that has been caught within the last 24 hours.
  • Clean the shrimp properly: Be sure to remove the heads, tails, and veins from the shrimp before cooking. This will help to ensure that your dish is not gritty.
  • Season the shrimp well: Shrimp has a mild flavor, so it is important to season it well. Use a variety of spices, such as garlic, paprika, and cayenne pepper, to give your dish a flavorful kick.
  • Cook the shrimp briefly: Shrimp cooks very quickly, so it is important not to overcook it. Overcooked shrimp will be tough and rubbery.
  • Use a good quality creole seasoning: Creole seasoning is a key ingredient in this dish. Be sure to use a good quality seasoning that is made with fresh, flavorful spices.
  • Serve the shrimp creole with rice: Shrimp creole is traditionally served with rice. This helps to soak up the delicious sauce.
