1 pound Italian sausage
2 onions, chopped
1 (28 ounce) can whole peeled tomatoes with juice
6 cups chicken broth
2 teaspoons dried basil
2 cups bow tie pasta
½ teaspoon garlic salt
1 cup chopped celery
1 cup chopped carrots
1 ½ cups shredded cabbage

Steps:

  • In a soup pot, cook sausage over medium heat until no pink remains.
  • Add onions, celery, and carrots. Cook uncovered for 5 minutes, or until onions are soft.
  • Add tomatoes, chicken broth, cabbage, and basil. Bring to a boil. Stir in macaroni, and cover. Simmer for 10 minutes, or until pasta is tender. Season with garlic salt. Serve.

3/4 pound fully cooked smoked sausage, sliced
1/4 cup all-purpose flour
1/4 cup canola oil
1/2 cup chopped onion
1/2 cup chopped green pepper
3 green onions, chopped
3-1/2 cups water
1 package (16 ounces) frozen corn
1-1/2 cups cubed fully cooked ham
1 can (14-1/2 ounces) diced tomatoes, undrained
1 cup chopped fresh tomatoes
1 can (6 ounces) tomato paste
1/4 teaspoon salt, optional
1/8 teaspoon cayenne pepper
Hot pepper sauce to taste

Steps:

  • In a large skillet, cook and stir sausage over medium-high heat until browned; drain well and set aside. , In a Dutch oven or soup kettle, cook and stir the flour in oil over medium heat for 5 minutes or until golden brown. Add the onion, green pepper and green onions; saute until tender. , Stir in the water, corn, ham, tomatoes, fresh tomatoes, tomato paste, salt, if desired, cayenne, hot pepper sauce and sausage. Bring to a boil. Reduce heat; cover and simmer for 1 hour, stirring occasionally.

1 1/2 lbs farmer sausage (smoked)
2 tablespoons vegetable oil
3 potatoes, peeled and diced
2 large carrots, diced
3 celery ribs, diced
1 1/2 cups diced rutabagas
1 onion, chopped
1 green pepper, diced
5 cups beef stock
3/4 cup kidney bean
1 (5 ounce) can tomato paste
salt and pepper
2 tablespoons fresh parsley

Steps:

  • Cut sausage into 1 inch pieces, then in half again.
  • In a frying pan heat oil cook sausages for 3 minutes.
  • Add diced potatoes cook for 2 minutes set aside.
  • In a large soup pot add beef stock, carrots celery, rutabaga, onion.
  • Boil 20 minutes or until vegetables are tender.
  • Add sausage, potatoes,kidney beans, tomato paste, salt and pepper.
  • Simmer for 10 minutes.

1 pound Italian sausage
1 clove garlic, minced
2 (14 ounce) cans beef broth
1 (14.5 ounce) can Italian-style stewed tomatoes
1 cup sliced carrots
1 (14.5 ounce) can great Northern beans, undrained
2 small zucchini, cubed
2 cups spinach - packed, rinsed and torn
¼ teaspoon ground black pepper
¼ teaspoon salt

Steps:

  • In a stockpot or Dutch oven, brown sausage with garlic. Stir in broth, tomatoes and carrots, and season with salt and pepper. Reduce heat, cover, and simmer 15 minutes.

1/2 cup cooked chicken (leftover or canned)
3 potatoes
2 carrots
2 stalks celery
1 cup Minute Rice
1 lb sausage (such as kielbasa)
salt and pepper
2 teaspoons chicken base (or 2 cubes bullion)

Steps:

  • Prepare vegetables into soup sized pieces. Cover with water, and bring to a boil. Boil 20 minutes until tender.
  • Meanwhile, brown sausage in the bottom of a soup pot. When it starts to get browned, or starts to stick, add 1/2 - 1 cup of water. The juices etc from the sausage is what flavors the soup. Add the chicken base, and the drained vegetables when they are done.
  • You will need 2 -3 cups of additional liquid, you can use the water from the veggies of fresh. Add the liquid, and cooked chicken, bring to a boil.
  • When it reaches a boil, add the rice. Simmer 5 minutes or so. Add salt, pepper, and possibly cajun seasoning blend to your tastes. (You may not need salt if you use bullion.).
  • Remove from heat, allow to cool 5 minutes before serving.
