AVERY ISLAND DEVILED SHRIMP

Put a little "boing" in your shrimp. Avery Island, LA is the home of Tabasco Sauce. The "island" is basically sort of a "salt hill" in the wetlands, formed by ancient deposits. A lot of that salt ends up in your Tabasco Sauce, along with some nice ripe red chile peppers and wine vinegar. It's one of my favorites, and this recipe adds a little Tabasco pizazz to your party.

3 tablespoons butter
1 lb breaded shrimp (frozen or your own)
2 tablespoons butter
1 medium onion, minced
1 clove garlic, minced
1 (10 1/2 ounce) can beef broth
1/2 cup water
2 tablespoons Worcestershire sauce
1 1/2 teaspoons prepared mustard (ballpark is good!)
1/2 teaspoon salt
1/2 teaspoon Tabasco sauce
1 lemon, juice of

Steps:

  • Cook breaded shrimp in 3 tablespoons butter until browned.
  • Remove from heat and keep warm.
  • For the sauce: Saute onion and garlic in the 2 tablespoons butter.
  • Add remaining ingredients except lemon juice.
  • Heat to boiling; reduce heat and simer for 15 minutes or until liquid is reduced to about 1 cup.
  • Add the lemon juice.
  • Add shrimp and toss to coat a bit.
  • Serve as an appetizer.

JEKYLL ISLAND SHRIMP

Named for the island off the coast of Georgia, this dish can serve as a rich appetizer or an elegant main dish! This comes from my "America Cooks" cookbook! I love it for it's simplicity and elegance! Hope you enjoy! Update: I have prepared this dish using frozen, cooked shrimp and as suggested by the comments from a reviewer, the shrimp were a little tough. Since the cooking time is to melt the butter and for the topping to get crisp, I would suggest reducing the cook time or using uncooked shrimp. I can say, even though the shrimp I used were a little tough, the taste was delicious! Hope this helps! Thanks!

2 lbs cooked shrimp, peeled and cleaned
4 tablespoons butter, softened
1 garlic clove, crushed
6 tablespoons fine dry breadcrumbs
2 tablespoons parsley, chopped
4 tablespoons sherry wine
1 pinch salt
1 pinch white pepper
1 pinch cayenne pepper
1 -2 lemon, for garnish

Steps:

  • Preheat oven to 375 degrees.
  • Arrange the cooked shrimp in individual dishes or a shallow casserole dish.
  • Combine the remaining ingredients except the lemon wedges, mixing well.
  • Spread this mixture over the shrimp, completely covering the shrimp.
  • Place in preheated oven for approximately 20 minutes or until the the butter melts and the crumbs become crisp.
  • Garnish with the lemon cut into wedges or slices.

2 lbs medium to large shrimp
1 lemon, thinly sliced
1 medium red onion, thinly sliced
2 tablespoons chopped pimiento
1/4 cup olive oil
2 garlic cloves, minced
1 tablespoon dry mustard
1 tablespoon salt
1/2 cup lemon juice
1 tablespoon red wine vinegar
1 bay leaf, crumbled
1/2 teaspoon cayenne pepper
2 tablespoons chopped parsley

Steps:

  • Shell and devein the shrimp.
  • Bring 1 quart salted water to the boil,, add the shrimp, and cook for 3 minutes ONLY.
  • Drain at once and rinse in cold water to stop the cooking process.
  • In a bowl combine the lemon slices, onion slices and pimiento; toss well.
  • In a separate bowl, combine the oil, garlic, dry mustard, salt, lemon juice, wine vinegar, bay leaf, cayenne, and parsley.
  • Whisk together and add to the bowl with the lemon slice mixture.
  • Arrange the shrimp on a serving dish and pour the marinade over the top.
  • Cover and chill for 3 hours ( no longer ) before serving.
  • Serve with toothpicks .

2 lbs jumbo shrimp
1 large habanero pepper, stem removed and chopped
2 ounces unsalted butter
1 1/2 tablespoons chopped onions
1 tablespoon cayenne pepper
2 teaspoons low-sodium worcestershire sauce
1 teaspoon fresh lemon juice
1/2 teaspoon pepper
1/2 teaspoon paprika
1/2 teaspoon ground cumin
1 tablespoon brown sugar

Steps:

  • Peel and de-vein the shrimp; wash, drain and place on skewers, 5-6 per skewer.
  • Sauté the onions and garlic in the butter, remove from the heat and place in a blender.
  • Add the cayenne, Worcestershire sauce, lemon juice pepper, cumin, brown sugar and the habaneros with seeds; blend till smooth.
  • Brush onto the shrimp skewers and marinate for 30-60 minutes in the fridge.
  • Fire up the grill and cook the shrimp until they are opaque and slightly crispy.
  • Dust them with paprika and serve.
