1/2 cup semisweet chocolate chips, such as Ghirardelli
4 very ripe (8 ounce) avocados, peeled and pitted
1/2 cup agave
1/2 cup unsweetened cocoa powder
1 tablespoon pure vanilla extract
1/4 teaspoon fine salt
Fresh raspberries, for garnish

Steps:

  • Place the chocolate chips in a small bowl. Place over a small saucepan of barely simmering water. Stir until the chocolate is melted and smooth, about 3 minutes. Set aside to cool slightly.
  • Place the melted chocolate, avocados, agave, cocoa powder, vanilla and salt in a food processor. Blend until smooth and creamy, scraping the sides of the bowl as needed. Spoon into glasses and refrigerate for at least 3 hours (can be prepared 1 day in advance). Garnish with fresh raspberries and serve.

4 ripe bananas
4 very ripe avocados
3 Meyer lemons, 2 zested, all juiced
1/4 cup honey
1/2 cup creme fraiche
4 teaspoons kosher salt
2 tablespoons olive oil
2 medium red onions, diced
1 cup red wine (recommended: cabernet or zinfandel)
1/2 cup port wine

Steps:

  • In a large bowl, roughly mash the bananas, avocados, lemon zest, lemon juice, honey, creme fraiche, and 2 teaspoons salt with a fork. Transfer the mixture to a food processor or blender. Puree the mixture until really smooth. Place the mousse in a clean bowl and put in the freezer for at least 1 hour before serving.
  • For the red onion puree: Heat the oil in a large saucepan until just smoking, then add the onions and cook until theyre deep brown. Stir constantly so the onions dont burn. When the onions are browned, add the red wine, port wine, and remaining 2 teaspoons salt, and simmer to reduce until the onions have absorbed all the wine. Remove the pan from the heat and transfer to a food processor or blender. Allow to cool for 1 minute. Puree the onions and run through a fine sieve and let cool.
  • To serve: In a martini glass, place a scoop of the mousse and top with the red onion puree. Enjoy as an appetizer or funky dessert.

1 (500-mg) vitamin C tablet, crushed to a powder
1/2 teaspoon salt
1 1/4 teaspoons unflavored gelatin (from a 1/4-oz envelope)
3 tablespoons whole milk
1/3 cup chilled heavy cream
For relish
3 tablespoons tarragon white-wine vinegar
1 to 2 tablespoons sugar
1/4 teaspoon salt
1/8 teaspoon black pepper
1/4 lb grape tomatoes, cut into 1/4-inch dice (1/2 cup)
1/2 lb papaya, peeled, seeded, and cut into 1/4-inch dice (1/2 cup)
2 tablespoons chopped red onion
1 teaspoon finely chopped fresh tarragon

Steps:

  • Make mousse:
  • Lightly oil ramekins and line bottoms with wax paper or parchment, then oil paper.
  • Quarter, pit, and peel 2 avocados. Purée avocado quarters with 1 tablespoon lemon juice, vitamin C, and salt in a food processor until smooth.
  • Sprinkle gelatin over milk in a small heavy saucepan and let soften 1 minute. Heat over low heat, stirring, until gelatin is dissolved, 1 to 2 minutes, then remove from heat. Add to avocado purée and blend until smooth.
