AVOCADO WITH LEMON AND OLIVE OIL
Because this recipe is so simple, using excellent ingredients is important. Choose a ripe avocado that gives slightly when pressed. Use smooth, richly flavored extra-virgin olive oil, and splurge on good sea salt; we recommend Fleur de Sel. Serve with toasted rustic bread, and let guests spread the avocado on it as they would fresh butter.

This creamy dressing, with its bold lemon flavor, is a refreshing change of pace, it's not one you'll see on the grocery shelves. My uncle in California shared the recipe with me.

AVOCADO FANS WITH BLACK OLIVE VINAIGRETTE
I purchased some Black-Olive paste for the Stocking Swap with mama's kitchen (Hope)and of course had to get one for myself. This is a recipe I found and adapted that uses the wonderful paste. The original recipe was by Jimmy Bradley, co-owner of of Chelsea's wonderful Red Cat at The Mermaid Inn.

Steps:
- In a small jar or container with lid, shake oil with the vinegar, olive paste, onion, basil and a pinch of salt and pepper until well blended.
- Halve the Hass avocado or quarter the Florida avocado and remove the pit and peels. Gently hold the avocados and thinly slice crosswise, keeping them whole (do not separate slices). Using a spatula, carefully place the avocado, cut side down, to a platter and gently press each of them to fan out the slices. Squeeze a bit of fresh lemon over the tops and drizzle the vinaigrette on top of the avocados and serve.

Tips:
- Choose ripe avocados that yield to gentle pressure. Avoid avocados that are too hard or too soft.
- Use fresh lemon juice for the best flavor. Bottled lemon juice can be used, but it may not be as flavorful.
- Add a pinch of salt and pepper to taste. This will help to balance out the flavors of the avocado and lemon.
- Serve avocado with lemon and olive oil immediately after preparing it. This will prevent the avocado from browning.
- If you are making avocado toast, use a sturdy bread that can hold up to the weight of the avocado. Whole-wheat bread or sourdough bread are good options.
- You can also add other toppings to your avocado toast, such as sliced tomatoes, crumbled bacon, or a poached egg.
Conclusion:
Avocado with lemon and olive oil is a simple but delicious dish that can be enjoyed as a snack, appetizer, or light meal. It is a good source of healthy fats, fiber, and vitamins. You can also be creative with this avocado dish. Add other toppings like sliced tomatoes, crumbled bacon, or a poached egg to your avocado toast for a complete meal. This versatile dish can be tailored to your own taste preferences. Whether you like it simple or topped with your favorite ingredients, avocado with lemon and olive oil is sure to please.
