6 cooking apples (Jonathan, Rome, Granny Smith)
1/4 cup sugar
2 tablespoons cornstarch
1 dash salt
1 1/2 cups nonfat milk
1 teaspoon vanilla

Steps:

  • Core apples, but do not peel.
  • Cut apples in half, width-wise.
  • Place in a microwave-safe container with a lid.
  • Add about 1/2 C water.
  • Cover and microwave on high power until done (about 6 minutes depending upon the size of the apples).
  • While apples are cooking, make sauce.
  • Place sugar, cornstarch and salt in the bottom of a heavy-bottomed saucepan.
  • Mix well.
  • Add milk and bring to a boil over medium heat, stirring with a wire whisk the entire time.
  • Remove from heat.
  • Stir in vanilla.
  • To serve, place 2 apple halves in a dessert dish and cover with 1/4 cup of sauce.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).

1 (9 inch) unbaked pie crust
½ cup white sugar
½ cup brown sugar
2 tablespoons all-purpose flour
½ teaspoon ground cinnamon
5 cups Granny Smith apples - peeled, cored and sliced
1 cup cinnamon chips (such as Hershey's®)
3 tablespoons butter
¾ cup all-purpose flour
¾ cup brown sugar
6 tablespoons butter
⅔ cup cinnamon chips
2 eggs
1 cup half-and-half cream
½ cup white sugar
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 400 degrees F (200 degrees C.)
  • In a large bowl, mix together 1/2 cup white sugar, 1/2 cup brown sugar, 2 tablespoons flour and cinnamon. Stir in sliced apples until coated with sugar mixture. Stir in 1 cup cinnamon chips. Pour filling into prepared pie crust, and dot with 3 tablespoons butter.
