1 1/4 pounds russet potatoes, peeled, sliced into 1/4-inch rounds
1 tablespoon olive oil
1 cup chopped onion
1 cup chopped red bell pepper

1 cup diced Canadian bacon
8 large eggs
1/4 teaspoon salt
1/4 teaspoon ground black pepper
4 ounces smoked cheddar cheese, grated (about 1 cup packed)

Steps:

1 c cheddar cheese, shredded fine
1 green onion chopped or 1 tablespoon of onion diced fine or 1 tablespoon of chives
1 9 inch pie crust- uncooked
2 c half anf half
4 large eggs
1/2 tsp dry mustard

Steps:

  • 1. Preheat oven to 400. Prepare a 9 inch pie crust or use one that is from the dairy case. Do not prebake.
