4 bacon strips, cut into 1/2-inch pieces

1 lb bacon
2 onions (diced)
4 garlic cloves (sliced)
1 (28 ounce) can diced tomatoes (drained)

Steps:

  • Cut bacon slices into 4 pieces and cook over medium heat in a large sauce pan. You may have to do this in 2 batches.
  • Cook bacon until a golden brown, but NOT crispy. You do not want any burnt edges.
  • Remove bacon and place on paper towels to absorb fat.
  • Add roughly diced onions and cook on medium heat until translucent.
  • Add your garlic and continue cooking until onions appear to start turning golden brown.
  • Strain mixture with a sieve over a bowl, as you want to reverse the bacon fat.
  • Put mixture back into pan and add a half of the diced tomatoes.

1 pinch salt

4 soft bread rolls

Spicy Tomato Relish, recipe follows
2 tablespoons extra-virgin olive oil
1 onion, finely chopped
2 cloves garlic, thinly sliced
1 green capsicum pepper, seeded and finely diced
1 red capsicum pepper, seeded and finely diced
1 teaspoon paprika
1/4 teaspoon cayenne pepper
1 red chile, seeded and finely chopped
2 teaspoons tomato paste
1 pinch sugar
1 bay leaf
1 (14-ounce) can chopped tomatoes
Sea salt and freshly cracked black pepper

Steps:

  • Preheat an oven to 400 degrees F.
  • Line a large baking tray with parchment paper. Arrange the bacon on the tray, and bake for 10 minutes or until crisp. Drain the bacon on paper towels.
  • Meanwhile, whisk together the eggs, cream and salt. Melt the butter in a nonstick frying pan over high heat, taking care not to let it burn. Pour the egg mixture into the pan, and cook for 20 seconds, or until the eggs just set around the edge. With a wooden spoon, gently bring the egg from the outside of the pan and fold it over itself to the center. Leave the eggs to cook for another 20 seconds, and then fold them again in the same way. When the eggs are just set, remembering that they will continue cooking as they rest, remove the heat.
  • Insert a couple bacon pieces into each bread roll and top them with some egg, arugula, and a spoonful of the tomato relish.
  • Heat the olive oil in a large saucepan over medium-low heat. Add the onion and cook, stirring occasionally, for 5 minutes or until soft. Add the garlic and cook, stirring, for another 2 to 3 minutes. Add the capsicums and sweat, stirring occasionally, for 10 minutes or until soft. Add the spices, chile and tomato paste and cook, stirring, for 5 minutes. Add in the sugar, bay leaf and tomatoes. Bring the pan to a low simmer and cook for 40 minutes. Season with salt and pepper, to taste, before serving.

1 tablespoon extra-virgin olive oil
1 garlic clove, minced
2 pounds ground beef (85% lean)
2 large eggs, preferably pasture-raised
3/4 cup fresh bread crumbs
1 tablespoon chopped fresh oregano, or 1/2 tablespoon dried Sicilian oregano
2 tablespoons Dijon mustard
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 tablespoons ketchup
12 slices bacon
4 ciabatta rolls
8 slices yellow Cheddar cheese
8 tablespoons Tomato Relish (see page 182)

Steps:

  • Preheat the oven to 350°F.
  • In a skillet over medium heat, sauté the onion in the oil until golden. Add the garlic and sauté for 1 to 2 minutes (be careful not to burn the garlic). Remove from the heat and set aside to cool.
  • In a bowl, combine the beef, eggs, onion bread crumbs, oregano, mustard, salt, and pepper. Form a loaf (approximately 7 x 5 x 3 inches in size) and place it in a roasting pan. Cover the loaf evenly with the ketchup. Bake for about 1 hour, until it reaches an internal temperature of 145°F. Remove and allow to rest slightly, then cut into 1/2-inch slices.

4 strips good quality bacon
1 Tb.olive oil
2 cloves of garlic minced
1/2 onoin diced
1 tsp. curry
1 Tb. sugar
2 Tbs. balsamic vinegar
4 Roma tomatoes, diced
2 Tb. drien oregano
1 tsp. dried basil
salt and pepper
1 Tb. grainy dijon mustard

Steps:

  • Heat a skillet on medium heat. Dice bacon and cook until crisp. Remove bacon to a paper towel. Add the onions and cook until slightly brown, then the garlic. Do not burn. Add the sugar and curry and cook about 3 minutes. Pour in 2 tbs. balsamic vinegar and deglaze pan. Add the tomatoes, orehano, basil, salt and pepper and stir well. Simmer for 15-20 minutes until liquid cooks down. Remove from heat and add the cooked bacon and mustard. All the relish to cool. Store in the refrigerator.
