1 small onion, thinly sliced
2 medium baking potatoes, halved lengthwise
4 bacon strips

Steps:

  • Layer onion slices on cut side of two potato halves; top with other potato half. Wrap each potato with two bacon strips. Secure with toothpicks. Place on a lightly greased baking pan. Bake, uncovered, at 325° for 1 hour and 20 minutes or until potato is tender and bacon is crispy. Discard toothpicks.

  • Preheat the oven to 400 degrees F. Line a rimmed baking sheet with Reynolds Wrap® Aluminum Foil. Set aside.

1 (24 ounce) package Simply Potatoes Red Potato Wedges
6 slices bacon
3 tablespoons sour cream
3 teaspoons hot sauce
2 tablespoons flat leaf parsley

Steps:

  • Pre heat oven to 350 degree. Add the frozen potato wedges to a baking sheet and put it in the oven for 15 minutes.
  • Remove the potatoes and cut them into bite sizes. Approximately 1 inches each.
  • Wrap 2 inches of bacon around 2 pieces of bite sized potatoes. Then use a tooth pick to hold them together.

1 lb small red potato
1 1/2 teaspoons chopped fresh rosemary
1 tablespoon olive oil
1/2 teaspoon salt
fresh groung black pepper
1 lb of thick cut bacon
1 cup sour cream
1 teaspoon hot sauce

Steps:

  • Preheat oven to 400.
  • Wash and dry potatoes, cut them into 1" pieces. (try keeping them the same size).
  • Put potatoes in a medium size pot cover with cold water and bring them to a boil. Season with salt and pepper to taste. Once the water begins to boil, cook for about 3 to 5 minutes, or until almost done. You do not want to cook them all the way as they will continue cooking in the oven.
  • Drain potatoes and put them in a large bowl. Add rosemary, olive oil, salt and a few grinds of fresh black pepper. Toss potatoes until they are evenly coated.
  • Cut the bacon in half. Wrap each piece of bacon, secure with a toothpick. (hint: soak toothpicks in water for about 30 minutes so that they do not burn). Put potatoes on a baking sheet lines with foil, might need 2 baking sheets.
  • Cook potatoes for 15 minutes, then flip each piece. Cook for another 10 - 15 mintues or until the bacon is cooked throught and crisp.
  • Mix sour cream and hot sauce in a small bowl. Season with salt and pepper. Serve with potatoes.

3/4 cup finely shredded cheddar cheese, divided use
1/4 cup fresh chives, cut into 1-inch pieces

Steps:

  • Pre-heat oven to 375 degrees Fahrenheit. Line 2 large jelly-roll pans (approximately 17.25 x 11.5-inches in size) with parchment paper. Place the 24, half strips of bacon on prepared pans in a single layer. Bake 5-7 minutes, or until bacon has rendered some of the fat and just starting to brown on the edges, but still flexible. Drain on paper towels; pat to remove excess grease.
