BBQ MARMALADE CHICKEN
This is a simple dish to make, very tasty. It can be made in a crock pot or the oven. This is delicious served with steamed broccoli and mashed sweet potatoes.

Steps:
- In a medium-size microwave-safe bowl, stir marmalade with soy sauce. Microwave, uncovered, on high until softened, 1 minute.
- OR melt in a saucepan, stirring often.
- Stir in barbecue sauce.
- Place chicken in crock pot. Pour in sauce. Stir to coat.
- Cover and cook on high setting 4 hours or low 6 hours.
- To bake, preheat oven to 350F (180C). Place chicken in a large, ovenproof casserole dish that will hold at least 16 cups (4 L). Pour sauce over chicken. Stir to evenly coat. Set on a baking sheet to catch any drips if it bubbles over.
- Bake, covered, in centre of preheated oven until chicken feels springy when pressed and sauce is bubbly, about 1 3/4 hours.
- To thicken sauce, remove cooked chicken to a large serving bowl.
- In a small bowl, stir cornstarch with water until dissolved.
- Carefully ladle liquid from slow cooker or casserole into a medium-size saucepan.
- Set over high heat. Bring to a boil. Stir in cornstarch mixture.
- Reduce heat to medium. Stir until sauce thickens, 2 minutes. Pour over chicken.
- Note: I prefer orange marmalade, ginger marmalade can be substituted. Recipe yields approximately 3 cups of sauce.

- Stir together flour and pepper in shallow dish. Lightly beat eggs in a second shallow dish. Stir together coconut and panko in a third shallow dish. Hold each shrimp by the tail, dredge in flour mixture, and shake off excess. Then dip floured shrimp in egg, and allow any excess to drip off. Finally, dredge in coconut mixture, pressing to adhere. Place on a plate. Coat shrimp well with cooking spray.
- Preheat air fryer to 400 degrees F (200 degrees C). Place 1/2 the shrimp in the air fryer and cook about 3 minutes. Turn shrimp over and continue cooking until golden, about 3 minutes more. Season with 1/4 teaspoon salt. Repeat with remaining shrimp.
- Meanwhile, whisk together honey, lime juice, and serrano chile in small bowl for the dip.
- Sprinkle fried shrimp with cilantro and serve with dip.

- In olive oil, saute onion, garlic, green onion, chilis, spices and herbs for about 7 minutes, until deep golden brown, stirring often.
- Stir in salt, rum and lime juice.
- Raise the heat, then lower and simmer until all liquid is absorbed.

WARM MARMALADE SAUCE
This decadent topping is way too easy. Three ingredients for a wonderful topping for ice cream or frozen yogurt!!! Once the whipping cream cooks up, this sauce turns into a thick creamy sauce, that hardens somewhat once served over ice cream. This recipe can be cut in half quite successfully. - Bring cream, marmalade and butter to a boil in a small saucepan over medium heat.
- Reduce heat slightly and cook until sauce has thickened, approximately 20 - 30 minutes. The sauce takes on a golden colour and should thickly coat the back of a spoon. (Watch towards the end of the cooking period or the butter will end up seperating from the sauce and it becomes tacky on the ice cream).
- Spoon over ice cream.
- Note: This sauce can be prepared while you are serving dinner. The only draw back is that you need to periodically "stir the pot" so that the mixture does not burn.
