HASSELBACK CINNAMON SUGAR BAKED APPLES

Hasselback Cinnamon Sugar Baked Apples image

I grew up in the Pacific Northwest where it seemed like just about everyone had apple trees in their backyard. We had so many apples that we had to find different ways to use them up. This dish was always our go-to since it's an easy way to transform an apple into something fun and particularly tasty with a scoop of ice cream on the side. The fan-like slicing technique known as Hasselback famously creates lots of surface area perfect for trapping sweet cinnamon sugar that caramelizes deliciously during baking. You can easily double this recipe to serve 4; just use a medium baking dish and adjust the cooking time as needed.

Time 45m

Yield 2 servings

Number Of Ingredients 5

1 large apple (any variety), peeled, cored and halved lengthwise
2 tablespoons unsalted butter, melted
2 tablespoons sugar
1/2 teaspoon ground cinnamon
Vanilla ice cream, for serving

Steps:

  • Place a rack in the center of the oven and preheat the oven to 400 degrees F. Line a small baking dish with parchment paper.
  • Place an apple half rounded-side up on a cutting board. Starting at the outermost edge, slice down most of the way (but not all the way) through each half at 1/8-inch intervals, creating fan-like slices all the way across the apple. You can place wooden chopsticks on each side of the apple to act as guardrails to make sure your knife doesn't cut all the way through.
  • Arrange the sliced apple halves flat side-down in the prepared baking dish. Use a pastry brush to baste the bottoms, tops and between the slices of the apples with the melted butter. In a small bowl, combine the sugar and cinnamon and sprinkle all over the apples and into the slits. Bake on the center rack until the apples are tender and lightly browned, 20 to 25 minutes. Serve warm with vanilla ice cream.

APPLE SURPRISE

Apple Surprise image

Real comfort food!! This one comes from a friend I worked with many years ago and one from my hand written cookbook. Makes a golden biscuit topping with a tasty sauce below. Nice with whipped cream and/or custard for a really filling dessert. I have altered the amount of water as suggested by reviewers but I find by allowing the pudding to stand after cooking the 2 cups should be ok.

Tips:

  • Choose the right apples: For best results, use firm, tart apples like Granny Smith or Honeycrisp. These apples hold their shape well during baking and provide a nice contrast to the sweet filling.
  • Peel and core the apples carefully: Use a sharp knife to remove the peel and core from the apples. Be careful not to cut too deeply into the apple, as this can make it difficult to fill.
  • Make sure the filling is thick enough: The filling should be thick enough to hold its shape when spooned into the apples. If the filling is too thin, it will run out of the apples during baking.
  • Bake the apples until they are tender: The apples should be tender when pierced with a knife. The baking time will vary depending on the size of the apples and the type of oven you are using.
  • Let the apples cool slightly before serving: Allow the apples to cool for a few minutes before serving. This will make them easier to handle and prevent the filling from running out.

Conclusion:

Baked apples are a delicious and versatile dessert that can be enjoyed all year round. They are easy to make and can be tailored to your own taste preferences. Whether you prefer a classic apple pie filling or something more unique, there is a baked apple recipe out there for everyone. So next time you are looking for a sweet treat, give baked apples a try.
