1 lb hamburger
3 cups cooked pinto beans
3 cups shredded cheese
1/4 onion, chopped
2 tablespoons southwest seasoning
1 jalapeno, seeds removed and diced
12 burrito-size flour tortillas
salsa, for serving

Steps:

  • Preheat oven to 350°.
  • Brown hamburger, onion, jalapeño and seasoning.
  • Add beans and simmer for 15-20 minutes uncovered.
  • Pour off any juice.
  • To assemble:.
  • Place 2 hefty spoonfuls on one end of a tortilla.
  • Cover the mixture with cheese - as much as you want.
  • Roll up burrito style.
  • Place on a cookie sheet, seam down.
  • Make sure the burritos don't touch.
  • Place the burritos in the oven and bake for 20 minutes, or until the tortillas are light brown and the cheese is bubbly.
  • Serve with your favorite salsa.
  • These are good hot or cold!

6 to 8 bacon strips
8 fresh mushrooms, sliced
6 green onions, sliced
1/3 cup chopped green pepper
1 garlic clove, minced
8 eggs
1/4 cup sour cream
3/4 cup shredded cheddar cheese, divided
3 tablespoons enchilada sauce
1 tablespoon butter
4 large flour tortillas (10 inches)
Sour cream and additional enchilada sauce, optional

Steps:

  • In a skillet, cook bacon until crisp; remove to paper towel to drain. Reserve 1 tablespoon of drippings. Saute mushrooms, onions, green pepper and garlic in drippings until tender; set aside and keep warm. , In a bowl, beat eggs and sour cream. Stir in 1/4 cup cheese and enchilada sauce. In a skillet, melt butter; add egg mixture. Cook over low heat, stirring occasionally until eggs are set. Remove from heat. , Crumble the bacon; add to eggs with mushroom mixture. 1 can (16 oz) Old El Paso™ refried beans
1 1/2 cups shredded Cheddar cheese (6 oz)
3 medium green onions, thinly sliced
1 cup shredded Mexican cheese blend (4 oz)

Steps:

  • Heat oven to 400°F. In 10-inch nonstick skillet, melt butter over medium heat. Stir in beef; sprinkle with seasoning mix (from dinner kit). Cook 10 to 12 minutes, stirring occasionally, until desired beef doneness; drain. Meanwhile, place refried beans in microwavable dish. Microwave uncovered on High 2 minutes, stirring once or twice.

1 tablespoon canola oil
1 small onion, finely diced
1 clove garlic, finely chopped
2 cans black beans, drained and rinsed
1 tablespoon pureed chipotle chile in adobo
Kosher salt
1/2 cup roughly chopped fresh cilantro
3 ripe Hass avocados, peeled, pitted and chopped
12 grape tomatoes, cored and halved
2 green onions, green and pale green parts only, thinly sliced
1 serrano chile, finely diced
Kosher salt and freshly ground black pepper
Juice of 3 limes
Splash canola oil
1/4 cup chopped fresh cilantro
1 bunch watercress, thick stems removed, chopped
2 tablespoons canola oil
1/2 pound loose Mexican chorizo or breakfast sausage
1 small red onion, halved and thinly sliced
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
12 large eggs, whisked until very smooth and fluffy
Kosher salt and freshly ground black pepper
1/2 cup chopped fresh cilantro
Canola oil, for brushing
Eight 10-inch flour tortillas
2 cups grated Monterey Jack
1 cup grated cotija cheese, for garnish
Cilantro leaves, for garnish

Steps:

  • For the black beans: Heat the oil in a medium saucepan over medium heat. Add the onions and cook until soft, about 3 minutes. Add the garlic and cook 30 seconds. Add the beans, 1/2 cup water, and the chipotle and cook, stirring occasionally, until the water is reduced and beans are heated through and soft, about 20 minutes. Use a potato masher to mash the beans into a chunky paste. Taste, and season with salt as necessary. Stir in the cilantro, and then spread on a baking sheet to cool.
  • For the salsa: Put the avocados, tomatoes, green onions, serrano and some salt and pepper in a large bowl and fold together. Fold in the lime juice, oil, cilantro and watercress. Set aside.
  • For the chorizo filling: Heat the oil in a large skillet until it begins to shimmer. Add the chorizo and cook until golden brown and cooked through, about 8 minutes, stirring a few times. With a slotted spoon, remove the sausage to a paper-towel-lined plate.
  • Add the onions and peppers to the pan drippings and cook, stirring occasionally, until soft, about 8 minutes. If the chorizo is in large chunks, chop it coarsely, then stir it into the onions and peppers. Add the eggs, and scramble until soft curds form. Season with salt and pepper, then stir in the cilantro and remove from the heat.
  • To assemble: Preheat the oven to 425 degrees F. Brush a nonstick baking sheet with some oil. Spread a thin layer of the beans across the center of a tortilla, leaving a 1-inch border. Top with some of the chorizo filling and a handful of Monterey Jack. Fold in the sides of the tortilla, and then roll from the bottom into a tight cylinder. Place seam-side down on the baking sheet and repeat with remaining tortillas, beans, filling and cheese. Brush the tops and sides of the burritos with canola oil, and bake until golden brown and crispy, about 7 minutes. Transfer to a platter, and top with Avocado-Tomato-Watercress Salsa, cotija and cilantro leaves. Garnish the platter with lime wedges.

1 (16 ounce) can black beans, drained
1 (14 ounce) can vegetarian refried beans
2 teaspoons chili powder
1/2 teaspoon cumin
1/2 teaspoon minced garlic clove (about 1 clove)
12 flour tortillas, soft taco size
6 scallions, chopped (optional)
2 tomatoes, chopped (or 1 14 oz. can diced tomatoes drained)
1 cup shredded cheddar cheese
salsa, for serving
low-fat sour cream, for serving

Steps:

  • Preheat oven to 400. Combine black and refried beans in a saucepan, and add the chili powder, cumin and garlic. Simmer for 5 minutes. Mash the bean mixture into a thick puree (I use a potato masher right in the pan).
  • On a plate, lay a tortilla flat and place 2 tablespoons of the bean mixture in the center of the tortilla. Top with some scallions, tomatoes and cheese. Roll up into a tube shape and place into a 9x13-inch baking pan, seam side down. Repeat until you've used all the tortillas and/or bean mixture.
  • Bake the burritos until they are browned, about 15 minutes. Top with salsa and/or sour cream as desired.
