1 (8 ounce) container sour cream
1/2 cup chicken broth
1 tablespoon all-purpose flour
1 tablespoon fresh rosemary
1 tablespoon Dijon mustard
1/4 teaspoon pepper
2 tablespoons chopped Italian parsley
2 teaspoons finely shredded lemon peel

Tips:

  • Use dried butter beans for the best flavor and texture. If using canned beans, rinse and drain them well.
  • Soak the beans overnight or for at least 8 hours before cooking. This will help to reduce the cooking time and make the beans more digestible.
  • Add a bay leaf, onion, and garlic to the pot when cooking the beans. These aromatics will help to flavor the beans.
  • Once the beans are cooked, mash them slightly with a fork or potato masher. This will help to thicken the sauce.
  • Stir in mustard, vinegar, and honey to taste. You can also add other seasonings, such as salt, pepper, or paprika.
