2 5-ounce logs of goat cheese, cut into thirds crosswise
3 tablespoons olive oil
1/2 cup dried fine bread crumbs, freshly made
2 tablespoons Sherry vinegar
2 cloves garlic, peeled and minced
2 teaspoons Dijon mustard
1/2 teaspoon salt
1 teaspoon freshly ground pepper
1 small bunch spinach, cleaned and trimmed
1 bunch watercress, rinsed with stems removed
6 sun-dried tomatoes, thinly sliced

Steps:

  • Coat the goat cheese with 2 tablespoons of the olive oil. Dust with bread crumbs and refrigerate for 1 hour. Line a baking sheet with wax paper. Set aside.
  • Preheat the oven to 400 degrees. Combine the Sherry vinegar, garlic and mustard in a large glass or ceramic bowl. Whisk in the remaining olive oil. Season with salt and pepper. Set aside.
  • Place the breaded goat-cheese pieces on the baking sheet. Bake in the oven until golden brown and soft, about 5 to 10 minutes.
  • Add the greens to the vinaigrette. Toss and divide among 6 salad plates. Place the warm goat cheese in the middle of each plate and garnish with sun-dried tomatoes.

Celebrate spring with a fabulous whole baked fish on a bed of new potatoes and cherry tomatoes. It comes alive with a punchy watercress and chilli salsa

750g new potatoes, sliced into ½cm-thick slices
1 whole or 2 smaller whole sea bass (around 1.5kg), gutted, scaled and gills removed
1 tbsp olive oil
2 garlic cloves, unpeeled, bashed
1 lemon, sliced
350g cherry tomatoes on the vine, ½ halved, ½ left whole
80g watercress
25g parsley
25g coriander
1 red chilli, deseeded and sliced
1 tbsp capers
150ml extra virgin olive oil
1 garlic clove, crushed
1 lemon, juiced

Steps:

  • Heat the oven to 220C/200C fan/gas 7. Simmer the potatoes in a large pan of boiling salted water for 5 mins until just tender. Drain and set aside.
  • Slash the flesh of the fish three times in a criss-cross pattern on both sides. Rub with the olive oil, then season with sea salt and black pepper. Pop the bashed garlic cloves and lemon slices into the cavity of the fish. Lay the potatoes and all the tomatoes in the bottom of a baking dish and season. Lay the fish on top and cook for 20-25 mins, or until the thickest part of the fish is cooked through (the flesh should come away from the bone easily and look opaque). Remove the fish, cover to keep warm and cook the potatoes and tomatoes for 10 mins more.
  • To make the salsa, tip the watercress, herbs, chilli and capers into a food processor and pulse to finely chop, drizzling in a bit of the extra virgin olive oil as you do. Mix in the remaining oil, then the garlic and lemon juice, and season to taste. Put the veg on a serving platter, sit the fish on top and drizzle with the salsa to serve.

4 boneless skinless chicken breasts
salt & freshly ground black pepper
1 red onion, finely sliced
3/4 cup white wine
7 ounces watercress or 7 ounces spinach
5 1/2 ounces cream cheese
2 tablespoons vegetable bouillon granules

Steps:

  • Preheat the oven to 400°F.
  • season the chicken breasts with salt and pepper and place in the bottom of an oven proof dish.
  • Cover with the sliced onion and pour over the white wine.
  • Cover with foil and bake in the oven for 20 minutes.
  • Place the watercress or spinach in a liquidizer.
  • When the chicken is cooked, drain off the cooking liquid onto the watercress or spinach.
  • Add the cream cheese to the liquid and blnd until smooth.

1 ¼ pounds spinach
¼ cup all-purpose flour
3 eggs, beaten
¾ cup shredded Cheddar cheese
½ cup dried bread crumbs
2 tablespoons chopped fresh parsley
¼ cup butter, melted
1 cup milk
½ teaspoon salt
⅛ teaspoon ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart baking dish.
  • Clean spinach thoroughly. Remove all excess water. Chop spinach. Arrange spinach and flour in layers, nestle beaten eggs about midway between the layers.

1 bunch watercress
1/3 cup heavy cream
2 tablespoons butter
Salt and freshly ground pepper to taste
1/8 teaspoon freshly grated nutmeg

  • Pick over the spinach and discard tough stems and blemished leaves. Rinse and drain well. There should be about 8 cups, loosely packed.
  • Cut off the tough ends of the watercress. Rinse and drain well. There should be about 3 1/2 cups, loosely packed.

1/2 cup sherry wine vinegar
1 teaspoon Dijon mustard
2 tablespoons finely minced shallots
3/4 cup extra virgin olive oil
1 1/2 cups walnuts, toasted if desired
1 pinch salt
3 tablespoons flour
1 egg white
1 lb fresh spinach
2 cups watercress
3/4 cup of fresh mint
2 teaspoons minced garlic
3 tablespoons minced fresh oregano
4 -8 ounces chevre cheese, softened
8 walnut halves (optional)
fresh ground black pepper (optional)

Steps:

  • Sherry Vinaigrette:.
  • In a small microwave safe bowl, whisk together the vinegar and mustard. Add the shallot. While whisking slowly, pour in the olive oil and whisk until mixture thickens slightly. Set aside.
  • Walnut Cups:.
  • Preheat oven to 350 and grease a mini muffin tin. Combine the walnuts and salt in a food processor and pulse to finely grind walnuts. Add the flour and egg white and process till well mixed. Place about 1 T of mixture into each greased mini muffin cup and press on bottom and sides to form cups. Bake for 12 to 15 minutes till golden. Remove and let cool completely on wire rack.
  • Salad:.
  • Rinse spinach well, remove stems and pat dry. Rinse and dry the watercress and mint.
  • Preheat the oven to 375. Put 1-2 T of chevre in each walnut cup. Drizzle with a little of the vinaigrette and top with a walnut half, if desired. Place on a baking sheet.
  • in a large salad bowl, toss the spinach, watercress, mint, garlic and oregano to combine.
  • Bake the filled walnut cups for about 4 minutes, till bubbling.
  • Put the vinaigrette in a loosely covered container in the microwave and heat on high for 1 1/2 minutes, till bubbline hot. Uncover carefully and whisk to blend.
  • Put one-eighth of the greens on each salad plate. Top with one of the warm walnut cups and immediately drizzle the hot dressing over each plate. Season with pepper if desired and serve immediately.
  • For an entree version of this salad, you could add some cooked chicken.

Steps:

  • Preheat the oven to 375°F.
  • Fill a large pot with 4 quarts water and add the salt. Bring to a boil over high heat. Add the pasta and cook for 8 minutes; it will be underdone. Reserve ¾ cup of the liquid and drain the pasta.
