BAKED CORNED BEEF BRISKET

Baked Corned Beef Brisket image

OMG, this rocked my world! Baking is the best way to retain all the flavors of a corned beef. I was raised on boiled corned beef. This by far blows that method "out of the water"! I don't think there is any turning back to the old way after this! This is a combination of recipes that I have previously posted. Corned beef needs to be baked long and at a low temperature in order to break down the connective tissue. *Please note: if your corned beef does not come with a flavor packet there are additional seasonings needed, as notes in step #2 below. I thank my good friend BBQGuru for his inspiration and making me see the light. Sorry I got lazy and had to improvise but it was damned good anyway ;^P. Recipe #254973 and Recipe#15843

Time 4h20m

Yield 4-6 serving(s)

Number Of Ingredients 7

2 -4 lbs corned beef brisket, retaining the fat layer, do not trim away
1 spice flavor packet included with corned beef
1/2 tablespoon onion powder
1 teaspoon thyme leaves, dried
1 teaspoon paprika
1 teaspoon garlic powder
heavy aluminum foil

Steps:

  • Preheat oven to 275°.
  • NOTE: 3/14 This will be salty. If you would like to reduce the saltiness of your corned beef before baking, please follow this recipe recommendations recipe#361142.
  • NOTE: *If your corned beef does not include a flavor packet add 2 T peppercorns and 1/2 T coriander seeds to the dried seasonings listed above.
  • Combine the flavor packet with other dried ingredients. Using a spice grinder or a mortar and pestle, grind to desired texture. I prefer medium or med-fine. Set aside.
  • Rinse corned beef brisket well with cold water. Pat dry.
  • Get out your 9 x 13 baking dish.
  • Tear off a large sheet of HEAVY aluminum foil, enough to wrap, tent and enclose the corned beef.
  • Place the corned beef on the foil, in a baking dish, fat side up.
  • Sprinkle with seasoning mix and pat into the brisket.
  • Bring the foil up & around the corned beef, do not close up the foil.
  • Bake, unwrapped, for 2 hours.
  • After 2 hours, wrap the brisket tightly and tenting the foil but sealing it for the remainder of the time, an additional 2 hours. Feel free to check and make sure there is moisture in the foil, re-wrap and continue baking. Approximate baking time is 1 1/5 hours per pound. It may take longer depending on desired level of tenderness.
  • Bake to an internal temperature of 185°. Check for tenderness. Continue baking until the brisket is fork tender. It may take additional time depending on the thickness of the brisket.
  • Allow the meat to rest before slicing. Cut against the grain.
  • I prefer to use an electric knife to get nice thin slices.
  • Serve with horseradish, a hearty rye bread, Colleen's Colcanon potatoes, and Irish Soda bread (see suggestions in the intro).
  • Enjoy!

BAKED CORNED BEEF AND CABBAGE

Baked Corned Beef and Cabbage image

Many of my friends have only eaten boiled or canned corned beef before they met me. One friend in particular, asked what I was cooking. I told her 'corned beef and cabbage'. I asked if she wanted to taste and she said she never has liked it. I asked how it was fixed. Finally figured it out as caned. She took a small bite,...

Categories     Roasts

Time 4h35m

Number Of Ingredients 4

1 pkg pre packed corned beef w/seasoning pack most are about 3 lbs
1 large cabbage head
3 lb potatoes
3-4 lb carrots

Steps:

  • 1. Open the package of corned beef. Rinse well, and put into a roasting pan. Take the seasoning pack and put the seasonings into a cheese cloth and put under the beef. Use about 1/2 cup of water to rinse out beef bag and put into the pan and cover it. Put into a slow oven (about 250 degrees) and just let it cook for about 3 hrs. Most packages of corned beef are about 3lbs. If you want more, use another pack.
  • 2. While meat is cooking, prepare vegetables. I usually wedge slice the cabbage. ( Cut it in 1/2, lay flat side down and cut into wedges) Wash or peel the potatoes and carrots. My family eats the skins for more nutrition. Cut into uniform sizes, about 2inch cubes for the potatoes or small wedges (1/4 cut small potatoes) and 2-3 inch lengths for the carrots(depends on the diameter).
  • 3. Par boil the vegetables. Carrots on the bottom, let cook for a few min, then the potatoes and then cabbage. I find the veggies cook faster in the oven if par-boiled first. You want them to be a little under-done so they can pick up the flavors of the meat. Take the veggies out of the pan, into a bowl to keep them from over-cooking and save the broth.
  • 4. Check your beef about 2-3/4 of the 3 hr mark. If it is 'fork-tender', take it out of the oven. If not, let it cook for another 20 min. When meat looks/feels like it is almost ready to fall apart, take it out of the oven, put it on a platter, add all your veggies into the pan, check the water level. If you think it needs another 1/2 cup or so, add the broth from the pan the veggies were cooked in. (You want to have the veggies at least 1/2 way covered with broth) Put the meat back into the pan, cover it and let it finish cooking the veggies.
  • 5. When everything is cooked, take the cover off and turn the temp up to about 350 for about 10 min. It will make a nice crisp to the top of your meat. Take it out, put the meat on a platter and slice away. Your veggies have the great flavor of the spices and beef cooked into them so they shouldn't need any salt but some still like more pepper added to their plates. :)

BAKED CORNED BEEF BRISKETS

Baked Corned Beef Briskets image

I have several recipes already posted for Corned Beef Briskets, one even won a Blue Ribbon, but I love to find creative new ways to challenge myself by creating a new version. I have made Corned Beef briskets like this many times before, but I never remembered to take pictures of it as I made it, but since yesterday was a very...

Provided by Rose Mary Mogan

Categories     Beef

Time 3h45m

Number Of Ingredients 1

2 corned beef briskets flats (about 6 3/4 pounds

Steps:

  • 1. Preheat oven to 350 degrees F. I had 2 brisket FLATS the largest one weighed 4 pounds and the other was just under 3 pounds. NOTE: THE FLATS ARE MUCH LEANER AND HAS LESS FAT THAN THE POINT CUTS, WHICH ARE THE ONLY ONES I BUY.
  • 2. You will need a meat rack and large pan to bake the briskets in the oven. Place the rack inside the pan then place the briskets on top of the rack with the fat side UP. This allows the meat to stay moist during baking.
  • 3. Add about 1 inch of water to the bottom of the pan, as well as the liquid from each of the corned Beef packages. THE WATER LEVEL SHOULD BE UNDERNEATH THE BASE OF THE WIRE RACK. Then sprinkle each of the briskets with the spice packet that was included in each package
  • 4. Now cover the rack and pan with a lid or a double or triple wrap of aluminum foil seal tightly. Place in the oven on lower rack and bake for 50 minutes to 1 hour per pound. I baked for 50 minutes per pound for the larger of the two briskets, if you are cooking more than one.
  • 5. The largest brisket was 4 pounds so I cooked it for 3 hours and 20 minutes. or until meat is fork temder. Then remove the foil or lid, increase the temperature to 375 degrees F, and bake the briskets for 10 additional minutes to brown a bit on top. Or you may want to add glaze if you so desire.
  • 6. Remove from oven and allow to sit and cool for about 10 to 15 minutes, then proceed to carve against the grain. This prevents the briskets from being stringy and chewy. Serve with your favorite veggies as desired.
  • 7. Note if you decide on cabbage with carrots onions and potatoes. Use the liquid that you baked the briskets in this adds lots of flavor to the vegetables. by carefully adding the liquid to a large pot. Add in the carrots and potatoes first, and cook for 10 minutes, then add in the cabbage and onions and cook for 20 additional minutes. Then serve as desired.
  • 8. Here is the link to my Blue Ribbon Winning Corned Beef recipe www.justapinch.com/recipes/main-course/beef/glazed-corned-beef-cabbage-n.html?p=1 and this one is very good too.

BAKED CORNED BEEF

Baked Corned Beef image

I've always loved corned beef, but the boiled kind lacked flavor and color! This Baked Corned Beef is not only packed with flavor, it is tender and the color is gorgeous! Besides that, it is EASY!!! Some people have been hesitant to make this recipe, fearing that it will be too sweet. There is just a hint of sweetness at the...

Provided by Sylvia Waldsmith

Categories     Beef

Time 7h15m

Number Of Ingredients 11

4 - 5 lb corned beef (flat cut)
1 large onion, peeled, cut in half and thinly sliced
12 oz cola (any kind)
1 c orange juice
1/4 c worcestershire sauce
1 tsp ground cinnamon
1 c light brown sugar, firmly packed
1/4 c honey
1 Tbsp yellow mustard
1 Tbsp chili powder
2 tsp minced garlic

Steps:

  • 1. Preheat oven to 250 degrees. Line a large baking pan or Dutch oven with aluminum foil.
  • 2. Place corned beef on foil (set aside the little seasoning packet**), fat side up and place onion slices over the top. In a small bowl, mix together cola, juice, Worcestershire Sauce and cinnamon. Pour around corned beef. Completely seal foil around pan. Bake for 6 - 7 hours or until fork tender.
  • 3. Near end of baking time, in a small sauce pan, mix together brown sugar, honey, mustard, chili powder and garlic. Heat over low heat until sugar is melted.
  • 4. Remove brisket, raise oven temperature to 400 degrees, open foil and baste brisket with sugar/honey mixture, do not recover.
  • 5. Return to oven and bake for another half hour, basting once during that time.
  • 6. Remove to platter, cover with foil and let rest for 15 to 20 minutes before slicing. Cut the corned beef against the grain into ½ inch slices.
  • 7. *I choose the flat cut over the point cut, because I find it less fatty. I think it is a better cut for corned beef. I use the point for braised brisket because it shreds more easily. **Now, what to do with that seasoning packet....if you are boiling cabbage, carrots and potatoes, place the seasoning packet in the liquid you use for preparing the vegetables.

Tips:

  • Before cooking, rinse the corned beef to remove excess salt.
  • Place the corned beef in a large pot or Dutch oven and cover with water. Bring to a boil, then reduce heat to low and simmer for 2-3 hours, or until the beef is tender.
  • To add flavor to the corned beef, add vegetables such as carrots, onions, and celery to the pot. You can also add spices such as bay leaves, peppercorns, and garlic.
  • Once the corned beef is cooked, remove it from the pot and let it cool slightly. Then, shred or slice the beef and serve it with your favorite sides, such as cabbage, potatoes, and carrots.
  • If you are using a slow cooker, cook the corned beef on low for 8-10 hours or on high for 4-6 hours.
  • To make a corned beef sandwich, pile the shredded or sliced beef on rye bread and top with Swiss cheese, sauerkraut, and Thousand Island dressing.

Conclusion:

Corned beef is a delicious and versatile dish that can be enjoyed in many different ways. Whether you are making a traditional Irish dinner or simply looking for a hearty and flavorful meal, corned beef is a great option. With its rich flavor and tender texture, corned beef is sure to please everyone at your table.
