Time 2h25m

Yield 4-6 servings

Number Of Ingredients 15

5 tablespoons extra-virgin olive oil, plus more for drizzling
5 cloves garlic, smashed
1 small onion, roughly chopped
1/4 teaspoon red pepper flakes, or more to taste
1 teaspoon finely chopped fresh rosemary
1 2-ounce piece pancetta (optional)
5 canned whole San Marzano tomatoes, crushed by hand
Kosher salt
3 pounds fresh cranberry beans in pods, shelled (or 1 cup dried cranberry beans, soaked overnight)
2 bay leaves
1 piece parmesan cheese rind, plus 1/2 cup grated parmesan, and more for topping
2 cups small pasta, such as shells or ditalini
1 bunch kale, stems and ribs discarded, leaves chopped
1/4 cup roughly chopped fresh parsley
Freshly ground pepper

Steps:

  • Heat 3 tablespoons olive oil in a large pot over medium heat. Add the garlic, onion, red pepper flakes, rosemary and pancetta, if using, and cook 2 minutes. Stir in the tomatoes and cook 2 more minutes; season with salt. Add the beans, 3 quarts water, the bay leaves and parmesan rind. Cover and bring to a boil, then reduce the heat to low and simmer until the beans are tender, 1 hour 30 minutes to 2 hours.
  • Uncover the pot and bring the mixture to a boil over high heat. Add the pasta and cook until al dente, about 8 minutes. Add the kale and cook, stirring occasionally, until tender, 5 to 6 more minutes. (The soup should be thick and creamy; thin with water, if necessary.)
  • Remove the bay leaves, parmesan rind and pancetta, if used. Add the grated parmesan, parsley, the remaining 2 tablespoons olive oil, and salt and pepper to taste. Top with more olive oil and parmesan.

BAKED CRANBERRY BEANS WITH PARMESAN

BAKED CRANBERRY BEANS WITH PARMESAN image

Number Of Ingredients 17

Ingredients
1-lb bag dried canberry beans (navy or pinto are okay)
4 oz pancetta (or 4 slices slab bacon)
2 medium yellow onions (diced)
Extra-virgin olive oil
Half a head of fennel (diced)
Salt and pepper to taste
6-oz can chopped plum tomatoes
6 cloves roasted garlic
1 sprig of thyme
1 sprig of rosemary
1 tbsp chopped flat-leaf parsley
1 bay leaf
4 cups chicken broth
1 bunch escarole (washed and coarsely chopped)
1 cup grated Parmesan cheese
¼ cup panko bread crumbs

Steps:

  • Baked beans were a treat on special-occasion Sundays, when my family took a break from spaghetti and meatballs. It's easy: The night before, empty the bag of dried beans into a bowl and cover with water. Soak 8 to 10 hours. Dice pancetta, then cook in a 6-quart stockpot over medium heat until crispy. Add diced yellow onions, ½ cup extra-virgin olive oil, and fennel. Sweat slowly for about 20 minutes. Season with salt and pepper. Add plum tomatoes, roasted garlic, the soaked beans, thyme, rosemary, parsley, and the bay leaf. Stir to coat, add chicken broth, and simmer for an hour and a half or until beans are tender. Add the escarole. Sprinkle with ¼ cup grated Parmesan cheese. Transfer to a 4-quart baking dish, top with another ¼ cup Parmesan, a drizzle of olive oil, and panko bread crumbs, and bake 60 to 90 minutes at 350 degrees, until bubbling.

CRANBERRY BEAN GRATIN

Cranberry Bean Gratin image

This delicious recipe is courtesy of Alice Waters and can be found her new cookbook, "The Art of Simple Food."

Provided by Martha Stewart

Categories     Food & Cooking     Main Dish Recipes     Casserole Recipes

Number Of Ingredients 10

1 1/4 cups dried cranberry beans
Coarse salt
1/2 onion, finely chopped
1 small carrot, peeled, finely chopped
1 small stalk celery, finely chopped
1/4 cup olive oil
4 cloves garlic, thinly sliced
6 fresh sage leaves, chopped
1/2 cup chopped tomatoes, fresh or canned
1/2 cup Toasted Breadcrumbs

Steps:

  • Place beans in a large bowl and cover with 4 cups water; let soak overnight.
  • Drain beans and transfer to a medium saucepan; cover with water by 2 inches. Bring water to a boil, reduce heat and skim foam from surface. Continue simmering beans until tender, 30 to 45 minutes, adding more water as necessary. Season beans with salt and set aside to cool in their liquid.
  • Preheat oven to 350 degrees. In a medium, heavy-bottomed skillet heat 1/4 cup of olive oil over medium heat. Add onion, carrot, and celery; cook until tender, about 10 minutes. Add garlic and sage, and season with salt; let cook 5 minutes. Stir in tomatoes; cook 5 minutes more and remove from heat.
  • Drain beans, reserving liquid. Transfer beans to skillet with vegetables; stir to combine. Pour bean mixture into a medium gratin or baking dish; season with salt. Add enough bean cooking liquid to almost cover. Drizzle with olive oil and top with toasted breadcrumbs.
  • Transfer gratin dish to oven and bake for 40 minutes, checking occasionally to make sure the gratin has not dried out. If necessary spoon a little of the bean cooking liquid into the side of the gratin, to avoid wetting the breadcrumbs.

Tips:

  • Choose the right type of beans: Cranberry beans are the best choice for this recipe, as they hold their shape well and have a slightly nutty flavor. If you can't find cranberry beans, you can substitute another type of bean, such as kidney beans or pinto beans.
  • Soak the beans overnight: This will help to soften the beans and reduce the cooking time. If you don't have time to soak the beans overnight, you can quick-soak them by boiling them for 1 minute, then removing them from the heat and letting them sit for 1 hour.
  • Use a flavorful broth: The broth you use to cook the beans will add a lot of flavor to the dish. Choose a broth that you like the taste of, such as chicken broth, vegetable broth, or beef broth.
  • Add plenty of aromatics: Aromatics, such as garlic, onion, and celery, will help to add depth of flavor to the dish. Don't be afraid to use a lot of them.
  • Season the beans well: Season the beans with salt, pepper, and other spices to taste. You can also add a bit of acid, such as lemon juice or vinegar, to brighten the flavor.
  • Don't overcook the beans: Overcooked beans will be mushy and bland. Cook the beans until they are just tender, but still hold their shape.
  • Garnish the beans with fresh herbs: Fresh herbs, such as parsley, cilantro, or thyme, will add a pop of color and flavor to the dish. Serve the beans immediately.

Conclusion:

Baked cranberry beans with Parmesan is a delicious and easy-to-make dish that is perfect for a weeknight meal. The beans are tender and flavorful, and the Parmesan cheese adds a delicious cheesy crust. This dish is sure to be a hit with your family and friends.
