This recipe is so great - you just bake the cranberry sauce along with the turkey. There are similar recipes here on Zaar for stovetop Cranberry/Orange Sauce but I love doing it in the oven while the big bird is roasting. Will keep for up to 2 weeks. This is a Chatelaine recipe

3 cups fresh cranberries (frozen can be used partially thawed)
1 1/2 cups white sugar
1/2 cup fresh orange juice
1 tablespoon orange zest
2 teaspoons sherry wine (optional)

Steps:

  • Place fresh cranberries in an 8" baking dish.
  • Sprinkle with sugar, orange zest& juice.
  • Stir the berries with the juice and sugar.
  • Bake uncovered in 325F for apprx an hour or until the berries pop.
  • Remove from oven& stir in the sherry.
  • Serve warm, room temp or chilled.

1 1/4 cups sugar
1/4 teaspoon ground cinnamon
Pinch nutmeg
1/4 cup bourbon, or more

  • Preheat the oven to 350 degrees F.
  • Combine the cranberries, sugar, cinnamon, and nutmeg in a small baking dish and cover. Bake for about 55 minutes. Remove the cover and stir to melt any un-dissolved sugar. Return the dish to the oven and bake for about 5 to 10 more minutes, or until the cranberries are soft and surrounded by a syrupy sauce. Remove the dish from the oven and immediately stir in the bourbon, to taste. Let the dish cool to room temperature, then chill for at least hour before serving. It does not "gel" but you do want to cook it long enough to make a good, thick consistency. You can use 1 tablespoon of excellent quality ground cinnamon instead of the cinnamon stick, if you prefer. 2 pounds cranberries
2 tablespoons orange zest
3 cinnamon sticks
1 pint orange juice
2 cups packed brown sugar
2 cups water

Steps:

  • Place the cranberries, grated orange rind, cinnamon, orange juice, brown sugar and enough water to cover cranberries in a saucepan. Bring mixture to a boil over high heat. Immediately turn heat down and simmer for about 1 hour or until the sauce has thickened. Taste for sweetness and adjust with additional sugar if necessary. You can not overcook, so continue cooking until you have a good thick consistency. Let mixture cool a bit then refrigerate in a covered container.

1 cup freshly squeezed orange juice
½ cup white sugar
½ cup brown sugar
1 (12 ounce) package fresh cranberries, rinsed
1 medium orange, finely zested, divided
1 crystallized ginger
¼ cup chopped pecans
⅛ teaspoon cinnamon (such as Supreme Saigon®)

Steps:

  • Combine orange juice and both sugars in a saucepan over medium heat and allow the sugar to melt down. Add cranberries, 3/4 of the orange zest, and crystallized ginger.
  • Cook sauce, mashing down berries, over medium-low heat for 10 minutes.
  • Meanwhile, toast pecans in a small skillet over medium heat until fragrant, 2 to 3 minutes. Set aside.
  • Stir cinnamon and chopped pecans into the cranberry sauce until well combined. Transfer cranberry sauce to a serving dish and top with remaining orange zest.

1 medium navel orange, seeds removed, chopped
1 lb. fresh (or frozen) cranberries
1 cup sugar
2 Tbsp. unsalted butter
1 (3"-long) cinnamon stick
1/2 tsp. ground allspice
Pinch of kosher salt

Steps:

  • Place orange in a large saucepan and pour in cold water to come 1" up sides of pan. Bring to a boil, then remove immediately from heat and drain orange in a mesh sieve or colander. Rinse under cold water; return to saucepan. Add cranberries, sugar, butter, cinnamon, allspice, and salt and bring to a boil, stirring to dissolve sugar. Cook, stirring often and reducing heat as needed to avoid scorching, until cranberries burst, juices are syrupy, and pan is visible when a wooden spoon is dragged across the bottom, 12-15 minutes. Let cool.

  • Sauce can be made 1 week ahead. Cover and chill.
