1 lb cherry tomatoes ((optional))
1 sweet bell pepper ((red, orange, or yellow - optional))
1 Tbsp olive oil ((extra virgin))
1 Tbsp Italian seasoning
salt & pepper ((to taste))

Steps:

  • Rinse and cut cherry tomatoes in halves. Rinse and cut bell pepper in strips, then cut into 1 inch bite size chunks. Arrange in a single layer on the parchment paper lined baking sheet.
  • Drizzle olive oil then sprinkle Italian seasoning over the vegetables. Toss to coat.
  • Preheat your oven to 400 degrees F (205 degrees C) and line a baking sheet with parchment paper (or aluminum foil).
  • Place sausages on the baking sheet (with or without cherry tomatoes and peppers) in a single layer, and so that sausages are not touching each other.
  • Bake in the center rack at the middle of the oven for 20-25 minutes or until the internal temperature reaches 160 degrees F.

They'd be a great addition to a red sauce or even top a pizza with the Italian sausage. The possibilities are endless!

1/2 cup(s) water
- salt (to taste)

Steps:

  • Preheat oven to 350 degrees.
  • Place sausages into baking pan (13x9). Add water. Sprinkle with spices.
  • Bake uncovered for 20 minutes.
  • Turn sausages over and return to the oven for about 40 minutes more.

2 large onions
2 bell peppers (I use 1 red, 1 green)
2 tablespoons olive oil
16 ounces whole tomatoes, drained discarding liquid
1 tablespoon dried Italian seasoning
1 pinch sugar

  • Preheat oven 325 degrees.
  • Cut Italian sausage into 2" pieces.
  • Bake in oven 30 minutes.
  • In the meantime cut onions into 1/4 slices.
  • Slice bell peppers into 1/2" slices.
  • Saute onions in olive oil just until tender; set aside.
  • In same skillet, saute bell pepper slices just until tender.
