RIESLING BAKED PEARS

Riesling Baked Pears image

So yummy. Pears oven baked and poached in a honey-wine sauce with cinnamon and orange flavors infused. The first time DH and I had this for dessert we were simply astounded at how these simple flavors combined to make such a rich and flavorful treat.

Time 1h

Yield 4 serving(s)

Number Of Ingredients 6

4 ripe pears, washed and dried (preferably Bosc with stems still attached)
2 cups riesling wine or 2 cups other fruity wine
1/4 cup honey
4 cinnamon sticks
4 bay leaves
4 slices orange zest

Steps:

  • Tip: For the orange zest, scrub the orange first and then use a vegetable peeler to remove the strips of zest. Make sure to leave behind the bitter, white pith.
  • Preheat oven to 400 degrees. Slice a thin piece off the bottom of each pear so that it will sit flat, standing up straight.
  • Arrange the pears in a pie pan or oven-proof small casserole dish.
  • Whisk wine and honey in a medium bowl until blended. (I usually have to microwave mine to make the honey melt a bit so that they will combine.).
  • Pour honey-wine mixture over pears and add cinnamon sticks, bay leaves and orange zest to the liquid.
  • Roast the pears, basting every 15 minutes, until they are tender and a bit wrinkled (about 45 minutes to 1 hour).
  • Use a slotted spoon to transfer the pears to serving dishes. Put the honey-wine mixture into a small saucepan and bring to a boil. Boil until slightly thickened, about 6 minutes. Drizzle over pears and garnish with cinnamon sticks and orange zest.
  • Serve warm, at room temp, or chilled.
  • Note: We sometimes put a small scoop of vanilla ice cream on this. Very rich and yummy. Another option: try cheese, such as ricotta or mascarpone -- sweeten cheese and stir it first.

PEAR TARTE - MEDIEVAL PEAR PIE

Pear Tarte - Medieval Pear Pie image

I have translated this from The English Huswife by Gervase Markham 1615 AD. It's unusual in that before this time pies were almost always made with a single crust while this one has two. Often a two crusted pie was called a coffin in that time period. Rosewater can be found in most healthfood stores or Middle Eastern groceries in the US.

Time 1h

Yield 8 serving(s)

Number Of Ingredients 11

3 cups dry white wine
1 cup sugar
1 cinnamon stick
4 -5 whole cloves
3 lbs firm ripe pears, bosc work well
1/4 cup sugar
1 teaspoon rose water
double crust pie crust
1 tablespoon butter
1/2 teaspoon rose water
1 tablespoon sugar

Steps:

  • Preheat oven to 400 degrees.
  • Combine wine and 1 cup sugar in large heavy pot over medium heat.
  • Stir until sugar dissolved.
  • Add cinnamon and cloves.
  • Peel pears, cut in half from top to bottom and remove core.
  • Add pears to wine mixture and cook for about 5-7 minutes or until pears are just tender.
  • Remove pears from syrup.
  • Turn up heat on wine and bring to a rolling boil.
  • Place bottom crust into pie pan.
  • Top with sliced pears.
  • Sprinkle pears with ¼ Cup sugar.
  • Remove spices from wine syrup.
  • Add 1 Tsp rose water to wine syrup mix well.
  • Take 1/3 C of wine syrup and pour over pears.
  • Place top crust on pie sealing edges by folding crust over edge of the bottom crust and pressing.
  • Cut vent hole into center of pie and place pie on center rack in oven.
  • Bake for 20 minutes then remove from oven.
  • Melt 1 Tbsp butter and ½ tsp rose water then brush this mixture on top of pie.
  • Sprinkle with tablespoon of sugar and return to oven.
  • Bake for another 20 minutes or until pie is golden brown.

Tips:

  • Choose ripe but firm pears: Overripe pears will become too soft and mushy during baking, while unripe pears will be too hard and tart.
  • Core the pears, but leave the stems intact: This will allow the pears to stand upright in the baking dish and make them easier to eat.
  • Fill the pear cavities with your desired filling: Common fillings include honey, nuts, spices, and dried fruits.
  • Bake the pears in a preheated oven: The baking time will vary depending on the size and ripeness of the pears, but it is typically around 30 minutes.
  • Serve the pears warm or at room temperature: Baked pears can be enjoyed on their own or with a dollop of yogurt, cream, or ice cream.

Conclusion:

Baked pears are a delicious and versatile dessert that can be enjoyed year-round. With their sweet and slightly tart flavor, pears pair well with a variety of fillings and toppings. Whether you are looking for a simple and elegant dessert or a more elaborate treat, baked pears are sure to please. So next time you are looking for a new and exciting way to enjoy this classic fruit, give baked pears a try.
