12 med. Bosc pears, peeled, leaving stems in tact
bowl of water mixed with juice of one lemon
1 1/2 C. water mixed with 5/8 C. sugar
1/2 C. white port or dry sherry
1/2 C. Grand Marnier
3 strips of orange peel
2 t. orange extract (opt.)
2 C. whipping cream
2 or 3 T. powdered sugar
shaved semi sweet chocolate

Steps:

  • Drop peeled pears into lemon water . In a saucepan simmer 5 min. 1 1/2 C. water and the sugar. Arrange pears in baking dish. Pour over them the sherry, liquor, sugar syrup and 1/2 C. lemon water. Add orange peel. Cover with foil and bake at 375 degrees for 30 min. Turn pears over. re cover and bake another 20 minutes. Carefully transfer to a cool dish and allow to come to room temp. To serve: place pear in a bowl, ladle some syrup over top with sweetened whipped cream and shaved chocolate

3 firm Bosc pears, peeled, halved, cored (about 1 pound)

  • Arrange the pears cut side up in an 8-inch square glass baking dish. Whisk the apple juice and sugar in a small heavy saucepan over medium-high heat until the sugar dissolves. 100g ricotta
½ tsp cinnamon
4 tbsp clear honey , plus extra to serve

  • Cut each pear in half, then place on a large baking tray. Use a teaspoon to scoop out the cores and make a dip in the centre of each pear. If your pears are firm, you may need to use a sharp knife to do this. Dollop about 1 heaped tsp ricotta into each dip, then sprinkle over the cinnamon and drizzle with a little honey.

  • Peel the pears, leaving the stems intact and dropping the pears as they are peeled into a bowl of cold water acidulated with the juice of the lemon. In a saucepan combine the wine, 2 cups water, the sugar, the zest, the cinnamon sticks, and the liqueur, bring the liquid to a boil, stirring until the sugar is dissolved, and simmer the syrup for 5 minutes. Arrange the pears, drained, on their sides in a baking dish just large enough to hold them in one layer and pour the syrup over them.
