I used my daughter's recipe with some modifications. For those who don't really fancy the taste of fish, this recipe will cure you of that. It is light and no overpowering fishy taste. Serve with rice and a vegetable of your choice (we like it with steamed broccoli).

2 salmon fillets, 1-1/2 inch wide and approximately 1 inch thick (at the thickest point)
2 tablespoons olive oil
1 teaspoon garlic powder
2 tablespoons Italian seasoned breadcrumbs
1 tablespoon parmesan cheese or 1 tablespoon romano cheese, grated
1 lemon, quartered (optional)

Steps:

  • Preheat oven to 375°F.
  • Pour 1 Tbsp of olive oil evenly in the bottom of a 9x9-inch glass baking dish.
  • Place the fillets in the bottom of the baking dish.
  • Pour the remaining olive oil over the fillets.
  • Sprinkle half of the garlic over the fillets.
  • Sprinkle the bread crumbs over the fillets.
  • Sprinkle the cheese over the fillets.
  • Bake for approximately 18 to 20 minutes making sure not to over bake.
  • Squeeze the juice of a lemon quarter over each fillet (optional).

4 (4 ounce) fillets salmon
3 tablespoons prepared Dijon-style mustard
salt and pepper to taste
¼ cup Italian-style dry bread crumbs
¼ cup butter, melted

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a shallow baking pan with aluminum foil.
  • Place salmon skin-side down on foil. Spread a thin layer of mustard on the top of each fillet, and season with salt and pepper. Top with bread crumbs, then drizzle with melted butter.
  • Bake in a preheated oven for 15 minutes, or until salmon flakes easily with a fork.

4 (4 ounce) salmon fillets (with skin on)
4 tablespoons Dijon mustard
salt (to taste)
lemon pepper (to taste, or use black pepper)
1 cup dry Italian seasoned breadcrumbs (about 1/4-1/3 cup for each fillet, can use more)
8 tablespoons melted butter (can use more)

Steps:

  • Set oven to 400 degrees F.
  • Line a shallow baking pan/sheet with foil, lightly grease the foil.
  • Place the salmon fillets skin-side down on the foil.
  • Spread about 1 tablespoon of Dijon mustard over the top of each fillet then season with salt and lemon pepper (or use black pepper in place of the lemon pepper).
  • Top each fillet with about 1/4-1/3 cup dry bread crumbs (pushing down gently to adhear to the fish).
  • Drizzle about 2 tablespoons (or more) of melted butter on top.
  • Bake for about 15 minutes or until the fish flakes easily with a fork.

4 tablespoons olive oil
1/2 cup chopped onion
1 tablespoon finely chopped garlic
1/2 cup dry red wine
4 tablespoons capers
1 tablespoon chopped fresh rosemary or 1 teaspoon dried
1 teaspoon chopped fresh oregano or 1/2 teaspoon dried
1/8 teaspoon hot red pepper flakes
1/2 cup canned crushed tomatoes
Salt and freshly ground pepper to taste
12 pitted black olives
4 boneless salmon fillets, about 6 ounces each
1/3 pound goat cheese, crumbled
2 tablespoons anise-flavored liquor, like Ricard
4 tablespoons chopped fresh cilantro

Steps:

  • Heat 2 tablespoons of the olive oil in a saucepan. Add the onion and garlic, and cook briefly while stirring. Add the wine, capers, rosemary, oregano, pepper flakes, tomatoes, salt, pepper and olives. Bring to a boil and simmer 5 minutes.
  • Preheat the oven to 475 degrees.
  • Pour 1 tablespoon of the oil in a baking dish large enough to hold the fish in one layer. Arrange the fish skin-side down, sprinkle with salt and pepper. Pour the tomato sauce around the fish fillets, brush the top of the fillets with the remaining 1 tablespoon oil and the cheese.
  • Bake for 5 minutes and sprinkle with Ricard. Switch to the broiler and broil for 5 minutes. Do not overcook the fish. Sprinkle with the cilantro and serve immediately
