BAKED SHORTBREAD APPLE DESSERT
Just a lovely comforting dessert that I've enjoyed making over the years and a nice change from the standard baked apple pie. It is great using the Girl Scout Shortbread cookies too. You can also substitute the shortbread cookies with oatmeal cookies.

Steps:
- Preheat your oven to 300 degrees F and line an 8x8 baking pan with parchment paper. Be sure to bring the parchment up the sides as it makes it easier to lift out later.
- Shortbread Base:
- Place butter into your mixer and turn on high for 5 minutes or until the butter turns white rather than yellow, that's how you'll know it's creamed. Next mix in the sugar, vanilla, and salt. Once combined, add in the flour and stir well. Press the mixture into the parchment lined pan and bake in the pre-heated oven for 15 minutes.
- Apple Filling:
- In a bowl, combine the apples, flour, sugar, cinnamon and nutmeg until the apples are well coated.
- Topping:
- Mix flour, ¾ up brown sugar. Cut in the butter and knead together.
- Remove the crust from the oven and turn the heat up to 350 degrees F. Sprinkle one half of the Topping over the short bread, then layer the apples on top. You will have multiple layers so try to keep it level. Once this is finished, sprinkle the remainder of the Topping evenly on top and place in the oven to bake for 30 minutes.
- Remove from the oven and allow to cool fully before placing in the fridge to set for at least 2 hours. Once it's set, remove from the baking dish by lifting out the parchment paper and cut into 16 squares.
SHORTBREAD COOKIES WITH WARM APPLES AND JAM
WHILE chocolate desserts, fresh fruit sorbets and fruit tarts re main the classic, ever-popular French desserts, lighter, cookie- based desserts are appearing more frequently. Several Paris restaurants have recently offered sable, or shortbread cookie, desserts. This recipe comes from Jacqueline Fenix, a fine restaurant in Neuilly, a Paris suburb, where the chef, Michel Rubod, offers warm shortbread with sauteed apples and homemade apricot jam. At Tour d'Argent the menu recently featured a dessert made of three layers of sables interlaced with fresh raspberries, all set in a pool of fresh raspberry sauce, while at Jacques Cagna sables came warm from the oven, accompanied by sauteed apples and cinnamon ice cream.

Shortcrust Pastry Dough
- Use cold butter to prevent the gluten in the pastry from developing, which would make it tough.
- Use a combination of plain and powdered sugars to give the pastry a bit of sweetness and a smooth texture.
- Use a food process or to make the pastry, as this will help to evenly distribute the butter and prevent it from over-developing the gluten.
- If you don't have a food process or, you can make the pastry by hand. Be sure to work the butter and sugar together until they are well combined, but do not overwork the pastry.
- Once the pastry is made, chill it for at least 30 minutes before using it. This will help to firm up the butter and make it easier to work with.
Assembly and Baking
- When assembling the shortcrust pastry, be sure to press it evenly into the bottom of the pan.
- Use a par-baking method, where you bake the pastry crust for about 15 minutes before adding the apple and crumble topping.
- This will help to prevent the pastry from becoming soggy.
- When adding the apple slices, be sure to arrange them in a decorative pattern.
- This will make the dessert more visually appealing.
- Sprinkl the crumble mixture onto the apples.
- Be sure to use a combination of oats, brown sugar, and spices to give the crumble a variety of flavors and textures.
- Bake the dessert until the crumble is golden brown and the apple slices are caramelizing.
Conclusion
This baked shortcrust apple dessert is a classic for a reason. It's simple to make and uses ingredients that are easy to find. The combination of buttery shortcrust pastry, tangy apples, and sweet crumble is irresistible. This dessert is sure to be a hit with your family and friends.
