It's a tradition - we eat baked stuffed shrimp for dinner and then play cards! (We've been leaving out the scallops lately due to the high price, and we don't even miss them.) We serve the shrimp with a nice garden salad and rice pilaf or baked potato.

2 (4 ounce) packages crushed buttery round crackers (such as Ritz®)
cooking spray
½ cup parsley
5 saltine crackers, crushed
½ teaspoon celery salt
1 clove minced garlic
4 sea scallops, chopped
½ cup chopped imitation crabmeat
¼ cup butter, melted
¼ cup white cooking wine
20 jumbo shrimp, peeled and deveined

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Coat a baking dish with cooking spray.
  • Mix crushed round crackers, parsley, saltines, celery salt, and garlic together in a large bowl. Add scallops, crabmeat, melted butter, and cooking wine; mix stuffing well.
  • Place a shrimp on a flat work surface. Slice horizontally through the middle, being careful not to cut all the way through to the other side. Open the 2 sides and spread them out like an open book. Repeat with remaining shrimp.
  • Stuff each shrimp with a heaping tablespoon of stuffing and place back-side up in the baking dish. Repeat with remaining shrimp and stuffing. Add 1 or 2 tablespoons water to the bottom of the baking dish to keep shrimp moist during baking.

I think the crabmeat stuffing adds somethng a bit more special. Prep time includes the stuffing's cooling time.

1 lb fresh lump crabmeat, shells removed (or 2 cans of canned crabmeat if fresh isn't available)
2 teaspoons cajun seasoning or 2 teaspoons Old Bay Seasoning (or to taste) (optional)
4 tablespoons butter, plus
3 tablespoons melted butter
1/2 cup onion, minced
1/4 cup celery, minced
1/4 cup green bell pepper, minced
1/4 cup chopped fresh parsley
1 tablespoon garlic, minced
1/4 cup mayonnaise
1 egg, beaten
3 tablespoons fresh lemon juice
1 tablespoon Worcestershire sauce
1 tablespoon hot sauce
1 cup buttery cracker, crushed
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
2 lbs u- 12 shrimp or 2 lbs jumbo shrimp, shelled,deveined,and butterflied

Steps:

  • Preheat the oven to 375 degrees.
  • Line your baking dish with foil, and butter or spray with non stick cooking spray.
  • Place the crabmeat in a large bowl and season with the Cajun Seasoning, Old Bay or salt and pepper, (your choice).
  • Cover and refrigerate until ready to use.
  • In your fry pan, melt 4 tablespoons butter over medium-high heat.
  • Add the onions, celery, and bell peppers and cook, stirring, until softened, about 4 minutes.
  • Add the parsley and the garlic, and cook, stirring, for 1 minute.
  • Remove from heat and let cool.
  • Add the cooled vegetables to the crabmeat and toss to combine.
  • Add the mayonnaise, egg, lemon juice, Worcestershire and hot sauce and stir gently.
  • Add 1 cup of cracker crumbs, salt and pepper to taste, and stir gently, being careful not to break up the crabmeat.
  • Spoon the crabmeat stuffing evenly into each shrimp (about 2 Tbsp), and place, stuffed sides up, in your baking dish.
  • Drizzle with the remaining melted butter.
  • Bake until golden, about 20 minutes.

1 tablespoon garlic powder
½ cup butter, melted

6 large idaho potatoes
vegetable oil, for coating
8 tablespoons butter
2 cups grated cheddar cheese, plus more for sprinkling
2 cups grated monterey jack cheese

1 lb shrimp, peeled and sauteed

Steps:

  • Preheat oven to 350°F.
  • Wash potatoes, then dry them and gently prick with a fork on the sides.
  • Coat each potato with vegetable oil, place on foil-covered pan, and bake for approximately 1- 1 1/2 hours until cooked through.

  • Remove the potatoes from the oven and slice each potato in half.

1 teaspoon dried sweet basil
½ teaspoon dried oregano
½ teaspoon dried tarragon
½ cup butter
¼ pound shrimp, peeled and deveined, divided
2 ounces scallops, diced
1 (8 ounce) bottle clam juice
1 (6.5 ounce) can diced clams
1 ½ pounds lobsters
1 lemon

Steps:

  • Combine cracker crumbs, basil, oregano, and tarragon in a large bowl.
  • Insert a knife about 3/4 of the way through the back of 1 shrimp; split nearly all the way down the center of the body. Open shrimp like a book. Repeat with 1/2 the shrimp.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt butter in a skillet over medium heat. Add remaining shrimp and scallops; cook until nearly opaque and lightly browned, 3 to 4 minutes. Dice and add to the cracker mixture. Add clam juice and diced clams. Mix stuffing well.

creole seasoning (tony cacherie's or zatarain's)
12 shrimp, peeled and deveined large shrimp (21-25 per lb) or to fit mushroom caps
1/2 c butter (salted or unsalted - don't use margarine) or light olive oil and a pat of butter for flavor
4 clove garlic, minced
1 Tbsp sherry (cooking sherry is fine)
1 Tbsp chives (dried or fresh)
12 large fresh mushrooms, stems removed
4 Tbsp mozzarella or your favorite cheese, shredded (part-skim okay)

Steps:

  • 1. Save the mushroom stems for another use. Either chop them or leave them whole and freeze until needed.
  • 2. Place the mushrooms in a foil lined baking dish or baking pan if you're making a large batch.
  • 3. Preheat oven to 350 degrees F. Lightly sprinkle creole seasoning over shrimp and toss to coat. Set aside.
  • 4. Heat the butter, sherry, garlic, and chives in a skillet over medium heat until the butter begins to bubble.
  • 5. Stir in the shrimp, and cook until they just turn pink, about 3 minutes.
  • 6. Place one shrimp in or on each mushroom cap, spoon the garlic-chive butter over the shrimp and into the mushroom caps; then sprinkle each with a pinch of mozzarella or your favorite cheese. Five Cheese Italian Blend, Havarti, Bleu, Parmigiana Reggiano, etc.
  • 7. Bake in the preheated oven until the mushrooms are tender and the cheese is golden and bubbly, 10 to 15 minutes. Serve immediately with lemon wedges and french bread to mop up the extra yummy garlic butter!
  • 8. Cook's Tips: If you want to make mini appetizers use smaller mushrooms and shrimp and place each one in a mini muffin pan to keep all that delicious garlic butter contained. If you want to get fancy, serve on a gently warmed deviled egg platter. Make sure it's oven safe - about 200 degrees is plenty warm enough. Recipe can be doubled, tripled, etc., which is what I usually do. I've made as many as 75 for a catering party.

1 lb extra-large shrimp (not the easy peel! 16-20 per lb)
3/4 cup oil
1/2 teaspoon salt
1 garlic clove, minced
1/4 cup butter
1/2 teaspoon pepper

1 cup onion, finely chopped
3/4 cup fresh breadcrumb (soft, not dry)
2 tablespoons butter, melted

  • Shell and devein shrimp, leave on tail.
  • In a 9 x 12 baking dish (this is what you will cook the shrimp in) combine the oil, garlic, salt, 1/4 cup butter and pepper.

  • Prepare stuffing: mix the basil, tarragon, onion, bread crumbs, 2 T. melted butter, 2 T. sour cream (I don't measure the sour cream too closely - add enough so the stuffing is fairly moist) and a pinch of salt.

  • Lay in a single layer in the pan (that has oil, melted butter etc in it waiting for the shrimp!).
  • Baste with the liquid in the pan.
