BAKED TILAPIA WITH TOMATOES AND ONIONS
Steps:
- Preheat oven to 450 degrees. Rinse off tilapia fillets and pat dry with paper towels. Season both sides of Tilapia with Old Bay, Seasoning Salt, Sea Salt, and Pepper then set aside. Lay out a sheet of aluminum foil long and wide enough for both tilapia to fit and so you can fold up the sides to prevent juices from running during baking. Drizzle olive oil on the foil along with the Lemon and Garlic Dill Sauce. Lay tilapia on top then distribute the diced tomato and onions across tilapia fillets. Fold edges of aluminum foil to create a "pocket" for the fillets and make sure its sealed. Place foil pocket in the oven and let baked for approximately 15 mins. During the 15 mins, you can also whip up a rice pilaf if you desire. After the 15 mins remove tilapia from oven and immediately serve over a bed of rice pilaf.

Tips:
- Choose fresh and firm tilapia fillets: Look for fillets that are bright pink or white in color and have a mild, slightly sweet smell. Avoid fillets that are slimy or have a strong fishy odor.
- Marinate the tilapia fillets: Marinating the fillets in a mixture of olive oil, lemon juice, herbs, and spices will help to infuse them with flavor and keep them moist during baking.
- Use ripe tomatoes and onions: Ripe tomatoes will be juicy and flavorful, while sweet onions will add a subtle sweetness to the dish.
- Don't overcrowd the baking dish: Make sure that the tilapia fillets are arranged in a single layer in the baking dish so that they cook evenly.
- Bake the tilapia fillets until they are opaque and flaky: The tilapia fillets should be cooked through when they are opaque and flaky. This will usually take about 15-20 minutes, depending on the thickness of the fillets.
Conclusion:
Baked tilapia with tomatoes and onions is a simple and flavorful dish that can be enjoyed by people of all ages. It is a healthy and affordable meal that is perfect for busy weeknights. Serve it with your favorite sides, such as rice, roasted vegetables, or a salad.
