1 can (10-3/4 ounces) condensed cream of celery soup, undiluted
1 can (5 ounces) tuna, drained and flaked
1/2 cup whole milk

  • Preheat oven to 350°. Prepare macaroni and cheese according to package directions. Stir in soup, tuna and milk. Pour into a greased 2-qt. baking dish. Sprinkle with cheese and, if desired, parsley. Bake, uncovered, 20-25 minutes or until cheese is melted.

1 pound hollow cavatappi or elbows with lines, or macaroni with lines
About 3 tablespoons EVOO, plus extra for drizzling
12 ounces line-caught canned tuna, drained
1/2 cup finely chopped fresh herbs, such as dill, parsley and tarragon
1/2 cup finely chopped red onion or scallions, whites and greens
2 tablespoons Dijon mustard
1 to 2 small ribs celery, finely chopped
1 lemon, juiced
Freshly ground black pepper
1 stick butter
3 tablespoons flour
About 2 1/2 cups whole milk
2 cups grated white Cheddar or gruyere cheese
1 1/2 cups homemade breadcrumbs or panko
1/2 cup grated Parm

Steps:

  • Bring a large pot of water to boil for the pasta. Salt the water and cook the pasta to less than al dente, 5 to 6 minutes. Drain and drizzle with a touch of oil to keep the pasta loose.
  • In a large bowl, flake the tuna and add the herbs (reserving a tablespoon or 2 for breadcrumbs), onions, mustard, celery, lemon juice, EVOO and some salt and pepper. Add the pasta and combine well. Transfer to a baking dish or large casserole dish.
  • In a medium saucepot, melt 4 tablespoons of butter. Whisk in the flour and cook 1 minute. Then whisk in the milk and season with salt and pepper, thicken to coat the back of a spoon. Stir in the Cheddar in a figure-eight motion. Pour the sauce evenly over the pasta and tuna. Gently combine with a spoon to settle the sauce. Cool and store for a make-ahead meal.
  • Melt the remaining 4 tablespoons of butter in a small pan and add the breadcrumbs and reserved herbs, toss to evenly distribute the butter, remove from heat and transfer to airtight container.
  • To prepare, preheat the oven to 400 degrees F and bring the casserole to room temperature. Top the casserole with breadcrumbs and Parm cheese. Bake until golden and hot through.

I loved this recipe but I used cream of mushroom soup and added the cheese into the casserole. I also melted butter and added bread crumbs to the top before baking, then sprinkle top lightly with dill seasoning. The resulting casserole was very creamy and flavorful.

8 ounces elbow macaroni (can also use 1/2 a package of spaghetti noodles broken into thirds)
1/2 cup chopped celery (optional but nice)
1 (10 ounce) can cream of celery soup
1/2 cup whole milk
4 tablespoons mayonnaise
1 teaspoon dry mustard
1 cup shredded cheese (plus a handful more to sprinkle on top if you want)
10 ounces tuna, well drained and squeezed dry (two five ounce cans of tuna)
4 tablespoons of minced jarred roasted red peppers or 4 tablespoons of jarred pimientos
1/2 cup breadcrumbs (or 1 cup of panko crumbs are REALLY nice if you have them on hand)
4 tablespoons margarine
1 teaspoon paprika

Steps:

  • Cook and drain macaroni. If using the optional chopped celery, boil it with the pasta.
  • In a bowl blend together the soup, milk, mayo, and dry mustard.
  • Stir in cheese, tuna, and pimiento.
  • Gently fold in macaroni/spaghetti and transfer into a 2 quart 8X8 inch casserole dish.
  • Combine crumbs, butter, and paprika and sprinkle evenly on top.
  • Bake uncovered at 350 for 30-35 minutes or so. When the crumbs are a pretty color and the juices are bubbling around the edges your casserole is done.
