Time 15m

Yield 1 Fish, 4 serving(s)

Number Of Ingredients 7

1 whole flounder
1/4 cup butter
1 lemon
1 tablespoon Worcestershire sauce
2 garlic cloves, minced
2 teaspoons black pepper
1 teaspoon salt

Steps:

  • Heat brolier on high.
  • Score the fish in two or three spots on the dark side.
  • Melt butter and worcestershire sauce with juce from half a lemon and garlic.
  • Rub fish down with salt and pepper on both sides, depending on the size of your fish you might need more or less salt and pepper.
  • Put fish under the broiler for 3 minuets.
  • Slide the fish out of the broiler and paint it with butter and garlic sauce every minuet or so untill the fish is done. I follow this rule: if you can stick a toothpick into the widest part of the fish, then place the toothpick to your lips and the toothpick is warm, your fish is done.
  • When fish is done drizzle with the juice from the other half of your lemon.
  • I like putting the whole fish on the table and let everybody digin.

BAKED FLOUNDER WITH ONION AND LEMON

Baked Flounder with Onion and Lemon image

Be careful when transferring the fish from the baking dish to the plate-flounder is a fragile fish that falls apart easily.

Yield serves 4

Number Of Ingredients 7

2 lemons, sliced into 1/4-inch-thick rounds
2 medium onions, peeled and sliced into very thin rounds (8 ounces each)
4 tablespoons unsalted butter
1 cup dry white wine
1 teaspoon freshly chopped thyme, plus several sprigs more
Salt and freshly ground pepper
4 6-ounce flounder fillets

Steps:

  • Heat the oven to 400°F. Arrange the lemons and onions in a 9 × 13-inch Pyrex baking dish. Dot with the butter; add the wine and 1/4 cup cold water. Sprinkle with the chopped thyme; season with salt and pepper. Bake until the onions are soft and translucent, about 40 minutes.
  • Remove the baking dish from the oven. Arrange the fish fillets over the lemons and onions. Season the fillets with salt and pepper. Scatter the fresh thyme sprigs over the fish. Baste the fish with a little cooking liquid. Bake until the fish is just opaque and cooked through, 16 to 18 minutes. Do not overcook. Serve with the cooked onions and lemons.

Tips for Preparing Baked Whole Flounder

  • When selecting flounder, look for fish with bright, clear eyes, shiny skin, and firm flesh.
  • Clean the flounder thoroughly before cooking. Remove the scales, fins, and entrails. Rinse the fish inside and out with cold water.
  • Season the flounder simply with salt and pepper. You can also add other seasonings, such as lemon zest, garlic powder, or paprika.
  • Bake the flounder at a high temperature to ensure that the fish cooks evenly. The ideal baking temperature is 400 degrees Fahrenheit.
  • Bake the flounder for 15-20 minutes, or until the fish is cooked through. The fish is cooked when it flakes easily with a fork.

Conclusion

Baked whole flounder is a delicious and easy-to-prepare dish. It is a great option for a weeknight meal or a special occasion. By following these tips, you can ensure that your baked flounder turns out perfectly every time.
