LLL BAKING MIX BISCUITS

LLL Baking Mix Biscuits image

This is from the La Leche League International Cookbook. When I am in a rush I just cut them into squares so I don't have to roll them out more than once. When the mood hits I will use whatever cookie cutters strike my fancy...my daughters love when I do that. I enjoy experimenting with adding different herbs, spices and spice mixes. Here's how I got my daughters to eat salmon salad sandwiches (once thought to be an impossible task!). I added Lemon Mrs. Dash and dry dill to the biscuit mix, then cut them out with an angel cookie cutter. I filled the cooked biscuits with a salmon and mayonnaise mixture and called them "Flying Pink Angel Sandwiches". They are now a favourite!

9 cups flour sifted
1/3 cups baking powder, double acting
1 cup nonfat dry milk, plus 2 tlbs nonfat dry milk
4 tsp salt
1 3/4 cups vegetable shortening

Tips

  • Carefully follow the instructions: Baking is a science, so it's important to follow the recipe precisely. Make sure you have all the ingredients and equipment you need before you start.
  • Use fresh ingredients: Fresh ingredients will give your baked goods the best flavor and texture. If possible, use organic ingredients whenever possible.
  • Preheat your oven: This is essential for ensuring that your baked goods cook evenly. Preheat your oven to the desired temperature for at least 10 minutes before you start baking.
  • Don't overmix your batter or dough: Overmixing can lead to tough, dense baked goods. Mix your batter or dough just until the ingredients are combined.
  • Let your baked goods cool completely before serving: This will help them to set and hold their shape. If you cut into them too soon, they may fall apart.
