Time 55m

Yield 4 servings

Number Of Ingredients 6

1/2 cup balsamic vinegar
2 to 3 tablespoons honey, depending how sweet you want it
3 tablespoons olive oil
2 garlic cloves, minced
4 (6-ounce) halibut fillets
Nonstick cooking spray

Steps:

  • Whisk the vinegar, honey, oil, and garlic in a bowl. Arrange halibuts in an 8-inch square baking dish. Pour marinade over the fish, coating it completely. Cover and refrigerate at least 30 minutes and up to 4 hours.
  • Preheat the broiler. Line the bottom and sides of a baking sheet with foil. Spray the foil with nonstick cooking spray. Remove fish from marinade, reserving marinade, and arrange the fillets atop the baking sheet. Pour the marinade into a heavy small saucepan. Broil the fillets until they are just cooked through and caramelized on top, about 12 minutes.

So easy, great presentation and twist to fish. I've used other 3/4"-1" thick fish and recommend marinating the full 4 hours if possible. Recipe courtesy of Giada, Everyday Italian.

Tips:

  • Choose fresh halibut fillets. Look for fillets that are firm to the touch and have a mild, slightly sweet smell. Avoid fillets that are slimy or have a strong fishy odor.
  • Use a variety of herbs and spices to flavor the halibut. Some good options include thyme, rosemary, oregano, basil, garlic, and lemon zest. You can also add a pinch of cayenne pepper or paprika for a little heat.
  • Don't overcook the halibut. Halibut is a delicate fish that cooks quickly. Overcooked halibut will be dry and tough. Cook the fish until it is just opaque in the center, about 4-5 minutes per side.
  • Serve the halibut with a variety of sides. Some good options include roasted vegetables, mashed potatoes, or rice. You can also serve the halibut with a simple lemon butter sauce.

Conclusion:

Balsamic-herbed halibut is a delicious and easy-to-make dish that is perfect for a weeknight meal. The fish is simply seasoned with herbs and spices, then baked in a balsamic vinegar sauce. The result is a moist, flavorful fish that is sure to please everyone at the table.
