BEST GLUTEN /DAIRY/ EGG FREE BANANA BREAD
This is a modification of my favorite regular banana bread from my "Home Baking" cookbook. I made it gluten free and Dairy free so my nephew could eat it and it turned out GREAT! My kids, who don't usually like my G.F. food actually told me this was the best banana bread they had ever eaten, even before they knew it was G.F. I used my own mixture of G.F. flour which I will put in a note at the end of the recipe or you can make up your own. Happy eating!

- Pre-heat oven to 375.
- spray bread pan with a cooking spray or coat with oil.
- combine dry ingredients in a bowl.
- In a blender, blend the wet ingredients.
- In a large bowl, using an electrical mixer, alternate the wet and dry ingredients mixing thoroughly (The dough will be very thick).
- Scoop into bread pan, mini-loaf pan or muffin pan, and bake at 375 for 35-40 minute for a regular loaf, 25-30 for mini-loafs or 15-20 minute for muffins.

During one of my Googling sessions, I stumbled upon an egg-free banana bread/cake recipe. However, when I tried it out the bread came out hard and sank badly. So I improvised and here's my banana bread recipe for those of you who can't eat or don't like to eat eggs. I hope you enjoy it!

- Peel and mash bananas well. Set aside.
- Sift all the dry ingredients together at least 2 times.
- Add oil, vanilla, sugar to the mashed bananas and mix well.
- Add the banana mixture to the flour mix.
- Slowly add milk to make a batter of thick consistency.
- Add nuts at this point. Mix together gently.
- Pour banana bread batter in a greased loaf pan and bake in a preheated oven at 150 deg.C for 35-40 mins or until toothpick comes out clean from the center.
- Cool for 5-10 minutes in the loaf pan, remove to a cooling rack to cool properly and serve slices.

- 1. Prepare a 9 x 5 inch bread pan with cooking spray. I always line the bottom with parchment for easy removal. Spray parchment as well. Preheat oven to 350 degrees.
- 2. Sift flour sugar salt and baking soda into large bowl.
- 3. In medium bowl, combine mashed bananas, vanilla, yogurt and 3 T fat free milk
- 4. Slowly combine the wet ingredients into the dry ingredients. Batter will be thick. Once they are combined gently stir in strawberries.
- 5. Pour into the prepared bread pan. Bake for 60-65 minutes. Bread is done when toothpick is inserted into the middle and comes out clean. Top should be golden brown.
- 6. Cool in pan for 10 minutes then turn out onto a cooking board to cool completely. Serve with butter!
