1/2 cup salted butter, room temperature (1/4 lb.)
1/2 cup sugar
1 egg
2 large ripened bananas, mashed
1 teaspoon vanilla
1 cup flour
1 teaspoon baking soda
2 tablespoons cocoa powder
1/2 cup sour cream
1 cup mini chocolate chip (regular sized will work, also)
1/2 cup walnuts, chopped (optional)

Steps:

  • Preheat oven to 350 degrees F. Lightly grease a 9- x 5-inch loaf pan with non-stick spray.
  • In a large bowl, cream butter and sugar together until light and fluffy. Stir in egg, mashed bananas, sour cream, and vanilla until well blended. Add baking soda, cocoa, and flour. 1 2/3 cups sugar (or more or less to suit taste)

1 cup mashed banana (about 3 medium)
2 cups cake flour
