BANANA PRALINE MUFFINS

BANANA PRALINE MUFFINS image

Categories     Banana

Yield 12 muffins

Number Of Ingredients 8

3 tablespoons brown sugar
1 tablespoon sour cream
1/3 cup broken pecans
3 small or 2 large ripe bananas
1 slightly beaten egg
1/2 cup sugar
1/4 cup oil
1 1/2 cups packaged pancake mix (or I use the recipe on line for Alton Brown's home made mix)

Steps:

  • 1. In a small bowl, stir together the brown sugar and sour cream, stir in the pecans and set aside. 2. Preheat your oven to 400 degrees 3. Mash the bananas. In another bowl, stir the egg, sugar, oil and mashed bananas until blended. 4. Add the pancake mix stirring just until moistened. 5. Grease 12 muffin tins or put liners in which I do to save time afterwards. Fill these 2/3 full with batter. 6. Drop 1 teaspoon of the pecan mixture on top of each muffin. 7. Bake for 12-15 minutes, rotating half way through until golden brown. 8. Take out of muffin tins after 10 minutes and cool.

Tips:

  • For a flawlessly smooth batter, use ripe bananas. Overripe bananas are ideal because they contribute a naturally sweet flavor and a velvety texture.
  • Do not overmix the batter. Overmixing can develop the gluten in the flour, resulting in dense, chewy muffins rather than light, tender ones.
  • Generously grease or line muffin cups to prevent the muffins from sticking. You can use muffin liners, cooking spray, or grease the cups with butter.
  • Feel free to play around with the toppings. Chopped pecans, walnuts, or a drizzle of caramel sauce are excellent alternatives to the traditional praline topping.
  • Store leftover muffins in an airtight container at room temperature for up to 2 days or freeze them for up to 2 months. Reheat frozen muffins in a preheated oven at 350°F for 10-12 minutes or until warmed through.
